looking for roasting tips for Jamaica Blue Mountain

    I have a friend who buys old hot air popcorn poppers and uses those to roast these beans. It works pretty good but you have to learn to listen to the beans. I think he stops at the "second crack".

    Hi Potis,
    Just finished my last roast today; regrettably today was the best tasting....day 7.

    Potis, when you say 2-3 off maximum, do you mean 70%- 80% power throughout the entire roast ?

    How did you use fan?

    Can you advise what quantity (load) and your load temp...75c or higher?

    Thanks in anticipation....really interested.

    Hi guys, I roasted JBM on my Hottop B a few days ago.
    Total roast time 15mins 45secs.
    I go relatively easy on the heat early for most of the roast (2-3 off maximum).
    I got to first crack at 205-206 degrees at around 13-13.5 mins. First crack seemed to take a bit longer than some of the other beans Ive roasted, but done and dusted by 208-210 degrees. Ejected at 216 degrees, just before second crack.
    Couldnt wait too long, so ground and drank on day 4. Delicious. Crema king - pulled a 50mm shot and half was crema. Wasnt fussed at first as an espresso, but the second cup was much nicer. Expensive but delicious, particularly with milk. The coffee got nicer as you drank more.
    Very very happy with it. Up there with the authentic Kona peaberry I roasted a while back.

    Cupped JBM this morning, score 85 seems about right.

    Smooth, mild pleasing taste, lingering aftertaste.

    Lee, what type of roaster do you have and do the results differ much from a drum roaster?

    Incidently, the majority of first cracks in the Hottop occur between 198c and 202c Bean temp probe.

    Hi Summercrema and Lee,

    Roasted and cupped Jamacia Blue Mtn. using Hottop B2...Details as follows.

    Load 230 Grms.
    Charge temp 130c (hottop readout)...100% power for one minute then 80% power till 150c bean probe temp, 177c HT temp.

    Leave bean shute ajar to release steam.

    At 150c BT increase power to 100% till start of first crack then reduce power to 40% for one minute ,back up to 50% till finish of roast.

    First crack at 10 mins 40 secs...192c BT probe, 200c HT readout.

    Finish roast at 14 mins 21 secs....Drop temp 216c BT,
    213 HT. No second crack as I wanted a lighter coffee fo use in the aeropress....I will try a tasting in the espresso around day 6-7.

    Roast development time between first crack and roast finish 3m.40s......nice.

    Comments, Lee this bean seems to reach first crack earlier than many others.

    Summercrema, the above roast is not considered a fast roast. It is only a minute faster than a 250grm normal roast on Hottop.Many professional roasters roast from as little as 11-12 minutes upwards.

    Cupping notes... Using SCAA cupping protocols, the roast scored 84.5....subjective I know, however I am not overly generous scoring my roasts.

    Pros... Smooth, Balanced, nice mild/delicate aftertaste.

    Cons... Lacks excitement and fruitness of most Africian coffees (which I prefer to roast)....not to die for relative to cost.

    Will rest the beans till day 5-6 and resume tasting/drinking.

    This is the second roast and different roast profile of JBM (this year). I did not use the fan on this occasion however will do so and compare cupping with the next roast.

    Forgot to mention, the colour is about 8 on the CS colour guide.

    Hope this contributes to your Hottop roasting.

    Hi,
    Are you sure that you hit FC at 190c? Is that the bean temperature? That sounds very low to me, all the beans that i have roasted so far dont fc until at least a bean temperature of 210.

    I am using a fluid bed air roaster.

    Hi Summercrema,

    Was the 220c bean temp probe or Hottop temp gauge? If it was the latter, then too hot, if 220c was the bean temp probe (if you have one) then it should have been spot on.
    Understandably you want to play with other beans for a while.
    I will try a normal (fast) roast tomorrow, cup the result  and provide feedback on temps. fan settings etc. including bean temp probe and hottop readout.

    To roast 250g in 14 -15mins is really fast, I will try it on other beans til I get it right before trying on the Blue Mountain again.

    My Hottop is the B model, pull another shot of espresso this morning from the first roast, no setting change on grinder, it tastes richer, smells better, here is a picture of it. Did do another roast with shorter time but ended up going to the bin, it was tasteless, no aroma, roast stopped at 220 degree, must be way off the mark, I was trying to lesson for 2nd crack wasnt looking at the temp!

    Hi Summercrema,
    Happy to help with your roasting on the hottop ( as best I can) and hopefully some other roasters might also be able to assist you.

    Its good you are tasting and comparing your roasts.

    Generally, professional roasters suggest around 3-4 minutes roast development time from established first crack until the end of the roast.

    The end of the roast might be a bit before second crack
    (lighter) or into second crack (darker)....controlling the roast during this period is done with power and fan.

    Anything more than say 5 minutes will tend to bake the roast and generate some less than desirable flavours. There is much written to support this proposition, so your 12 minutes between first and second would likely not allow you to get the best result from very expensive beans.

    Did you manage to record your power settings and fan settings for your roast monitor as posted above?
    This may help with support to tweak your roasting on the Hottop.

    Have you had a chance to compare you roast with the suggested one in your manual (if you have one) or the Hottop USA website?

    Hopefully this will assist.

    Hi Juliet,

    I can do the roast quicker, normally I allow a 2 degree rise for each minute between FC and SC, once I find out SC point for Blue Mountain I can try a 3 degree rise.
    Just pull a short this morning, used it to make a latte, I would say if someone told me this is PNG I would believe it. Roasted another bag with shorter roast time I think a blind test will be interesting.

    Hi Summercrema,
    Just looking again at your roasting log, in particular a 12 minute roast development time between first and second, and would like to suggest this type of roast can be substantially improved,if you wish to take on board some suggestions.

    Incidently, have you cupped or tasted your roast yet and how was it?
    Perhaps you might bag it to rest for 5 days before tasting again.

    The increase in temperature up to first crack seems a lot less than the norm (or capability) of a Hottop which ideally is about 10c per minute from 150c to 190c before reducing power prior to first crack.

    Couple of questions... Do you have a P or B model ?
    Also did you record your power/fan settings throughout the roast?

    Im hoping a couple of Hottop buffs can also chime in to assist you.
