    Hello, so my roaster has been on a bit of a hiatus for the last 18 months or so and I have a bit over 10kg greens that Im going to start getting stuck into.

    These beans have not been stored in airtight conditions although they have been kept in a dry environment. I do believe they will be passed their prime.

    So what are peoples opinions on a very general profiling principal for roasting older green beans?

    I have roasted a yirg with an intial crunch test finding them to be a bit woody.

    My hunch is to roast them as fast as I can to first crack in order to save any brighter notes they have left.

    Do people think I should complete the roast as fast as possible? Have a moderate slow down to second crack ie, 4 minutes? or slow things down dramatically after first crack, ie 5-8 minutes.

    I use a gene cafe and have found as a general starting point that it normally produces really balanced coffee when its set to 225c for 18 minutes from a cold start.
    Perhaps I should just up the temperature a couple of degree ie 227-8 and keep it simple?

    Do people think I should be roasting lighter or darker then usual? Ie lighter to save as much character as possible, or darker to try and hide and unpleasant drying stage flavors?

    All thoughts appreciated?

    With 10kg of green on hand why not just roast a batch or two to find out.
    At 18 months if the beans have been stored well I dont see any major drama roasting them.

        Ive roasted beans nearing 6 years old.  Theyd definitely lost their get up and go and were rather bland, but drinkable.  Having said that Ive now retired beans older than 3 years - (I brought waaay too many beans long ago). 

        They were stored well and smelt fine.

          Crikey, a visit by the legendary Corretto, first post since early Oct 2009, welcome back Belinda.
          You realise you have much to answer for on the Australian home roasting scene.
          The Corretto set up is now widely used (myself included) its a simple, cheap, easy to put together roaster that punches way above its weight.
          Now, about those 6 year old beans, I guess it was worth a try.

            Not only the Australian scene.  If youve been on youtube lately youd find the Corretto roaster being widely used in the USA too and I am sure Globally for the last few years. I vote Belinda to be awarded something in recognition of her contribution to home roasting! Its funny that Correttos description of her roasting set up is not "corretto" but "Breadmaker Heat Gun"    Guess it would be a little strange.  ;D

              Well thanks, you are all too kind. But its only a heat gun married to a bread maker. If I didnt do it someone else would have. No biggy really.

              Havent posted for a while, but Ive been around checking out whats been happening. Still regularly roast once a fortnight or more.

              Anyway back to the beans. I retired over 30 kg of old green beans. Might try a trick KK mentioned to me to revitalise some of them though.
