ok, i think ive solved the problem for now. appears to be a dosing problem. looks like i was dosing way too much. ended up in funny pucks. its like really crumbly when i try and knock the puck out
ive lowered my dosage but still enough to a point where i still get an imprint of the shower-screen screw. i think thats right... the extractions are still good which also means more coffee to enjoy!
about the chaff. yeah, ive tried to remove the loose chaff as much as possible. various methods from stirring whilst just blowing wind (manual, natural or fan-powered) to the ol colander shuffle method. i was just unsure whether there should be chaff in the split of the bean. thanks robusto
I use a drum roaster over a barbecue, but never have issues with chaff. Much of it is burned away as the drum rotates.
A fair amount remains inside. When I drop the beans from one colander to another to cool them---with an electric fan blowing the airstream inbetween--the remaining chaff is blown away pronto.
Little stubborn flecks which may reamain attached to individual beans....I agitate the colanders, swirling the beans around, so friction works the chaff loose, and then the fan blows the remnants away as well.

turns out the roasts were City roasts (i think, could be City-minus). quite light... however, i do notice that chaff remains in the bean (these were the Dominican Rep. and Peru beans). i thought it was fine. but grinding and running it thru the espresso machine results in a very weird puck.
i dont have a pic, but basically it doesnt come out clean. instead, its crumbly. still troubleshooting whether its because of chaff in the grounds making it that way.
