I'm not sure if I have a roast or grinder problem so here goes!!
My setup is Behmor 1600, Breville Dual Boiler, Breville Smart Grinder.
I've had the Breville's for just over a year but the Behmor is a new addition, about 10 roasts in now!
I've had no issues with grind on separate roasts of the Ethopia Ghimbi and Peru Ceja De Selva but I think I took them both a tad too far into CS10. I've just roasted a new batch of both to CS8 and combined them to try as a blend. However when I try to grind them I can't get them fine enough for a decent pour. I'm currently down to the finest setting and only getting 3/4 on the pressure gage. Tamp and dose are both fine.
Only difference between the separate vs combined beans is roast depth and age. Separate were 6/7 days old but I've run out so I'm using the combined at 2 days old!
Would this make a difference? Do I have to let the beans rest longer or shoudl I get a shim kit for the grinder?

I don't measure but I can confirm that I am actually over dosing compared to my usual setup to try and compensate but still no good on the pressure or the pour tbh!
