I've had some divots/craters in all of my roasting of Monsoon Malabar.
I use a Behmor and agree with chokkidog that too much early heat and/or leaving it too long into 2c will cause this problem.
I did a p2 roast first up and got lots, then a p4 roast which I let go too long into 2c and again got lots, so my 3rd attempt was another p4 and hit cool at first sign of 2c.
This 3rd attempt was a lot better and only a few beans had divots/craters.

Probably a good thing... having "creators" in your beans could help you to attain the elusive "God shot"

Anyway, I think I'm starting to get it a bit now. I live in Adelaide and there's some really nice guys at a cafe in piri street called viva that roast their own, and they said a similar thing. too much heat. Or that I'm using a softer bean. They use only SHB and don't have that problem. I think tonight I might try the same beans on P3 or P4 as that gradualy builds up the heat as the roast progresses. at this stage I pull at the very beginning of second crack. I'm not too sure what I'm doing yet but I know that I like a reasonably dark roast for espresso. Having said that it seems that each roast is getting gradually lighter.
This coffee roasting thing is very complicated! so many variables! Either way I'm loving every minutes and Coffee Snobs is without a doubt the best business I have ever dealt with! And thanks for the kind welcome Chokkidog!

I'd prefer alchemists…………….. turning my beans into little nuggets ;-D
Seriuosly tho', craters can also come from the violence of getting stuck into rolling second crack. Bits blow off the sides of some beans 8-o
Unless that's your style of coffee maybe pull the roast a bit earlier? Just before second crack?
Some beans will have neat little holes in them caused by a borer insect. I have seen them in the Peru; a
sure sign that no insecticides have been used :-)

p.s. if you are applying too much heat between 1st and 2nd crack and the roast is going too fast
divots will appear. Proper drying at the start of the roast is essential but don't push things too hard
towards the end. All free and bound water has to be released from the beans in an orderly fashion!
If there is any residual H2O at second crack, because of heat acceleration, it will blow out of the bean,
like a geyser.

I did think it was something to do with high heat early. I'll try a profile that ramps up the heat on south american beans from now on and see how I go. As for taste, bang on, both beans are fantastic!

You have to have a few threads under your belt to upload pics (think its 5?) but the craters tend to be called divots, and often occur when you give too much heat early on to softer beans (like the sth americans mentioned). Maybe one of the Behmor gentler profiles would help?
I'll leave that to a Behmor user
Don't stress too much - it can also be caused by defects in certain green bean - more importantly, how do they taste?

Creators in my beans
Hi guys,
I’m only new at this and I’m having a great time as you’d expect! I have noticed that with a few beans that I’m getting some burnt creators or what look like holes in my beans. It seems to be happening with Colombian Supremo and Brazilian Yellow Bourbon. I’m using P1, and P2, 1 pound, and 400g batches. and getting the same result. Not to many creator beans, maybe 5-10 in 400g With the Brazilian it was quite dark, that’s the one in the picture. Does anyone know what this is?
OK I'm also clearly having trouble uploading a picture too! If anyone can help with that I'll upload a pic!
