    Gday mm67,

I dont think any of what we do is a big secret mate (tongue in cheek), its more a case of there being so many variations of the many means we use for roasting the bean. Even two people using the exact same brand and model of popper will probably be using differing profiles to achieve the same end because of the differences of performance between the two poppers.

Really, you have to experiment with your own particular method to find out what provides the best "in cup" results for you. A general rule of thumb (and it is very general) is to roast your beans such that the total roast is completed within a 12-18 minute period. Generally, try to attain 1st Crack relatively quickly... say between 6-10 minutes, set a very gentle heat ramp after 1st Crack so that 2nd Crack (if you intend reaching it) is attained between 4-8 minutes after 1st. Most poppers wont let you control the roast to this degree without modification but the Corretto, HG/DB and of course the specialist home roasters like the Gene Cafe and the HotTop do allow this kind of control.

Very subtle beans like the better Brazils, Colombians, Bolivians for example really do benefit from a very gentle roast profile and pulled well before 2nd Crack otherwise all the subtlety is lost in an all pervading ashy flavour that is not very pleasant. So mate, dont be afraid to experiment with your particular method and make sure you keep an accurate, informative Roast Log including Cupping Notes to assist with future roasts. Nothing to it

    Cheers,
    Mal.

Mal, I think this post should go in the FAQs - nice one!

started a topic roast profiles and taste characteristics.

    roast profiles and taste characteristics.

Id like to hear from people as to what kind of tastes come out from different profiles, roast level being equal. Ie expected differences in flavours from a roasts completed in 10,15,20 or 25 minutes

I would also like to hear what kind of roasting times/profiles people had for their favorite roasts. (the ones that you remember being amazing.)

There is plenty of conflicting information out there with many people saying to keep roasts below closer to 15min for second crack and some people saying to push the times right up past 20 minutes and beyond for second crack.

Im also curious what do the pros do? or is it a secret

Working...
