  • Yemen Ismaili Roast

    Just completed a roast of some Yemen Ismaili I got the other day. Roasted 351g in the coretto. Post roast weight is 287g giving 18.2% loss.

    These were fun to roast. Took it nice and slow as you will see from the times below:
    - FC: started @ 11m 32s / 208 degrees.
    - RFC: didnt get a rolling FC, couldnt hear a damn thing!
    - EFC: end of FC @ 13:55 / 222 degrees
    - SC: started at 19:06 / 228 degrees
    - RSC: 19:21 / 232 degrees
    - Pulled: 19:43 / 230 degrees - 22seccs into RSC

    FC was very slight and not very noticeable/easy to hear . Must be because these beans are tiny.
    RFC didnt really happen. Just got some cracks here and there between FC and EFC. I attribute this to the different size beans in this batch.
    At EFC, I dropped the temp to 208-210 and held it there until the 18minute mark and then increased the temp to get to SC/RSC.

    Heres a pick below. Note the 2 stones at the top of the plate found in the batch. I did my research and made sure I checked for them otherwise goodbye grinder.

    Will be interested to see how this one cups as it cost a pretty penny.

    looking good there javabeen. common advice is to let it sit for at least a week or thereabouts

      Thats a particularly even roast for the Ismaili jb,

      Very well done mate 8-). Where would this roast sit on the new CS Membership Card scale, its a bit hard to determine the exact stage of the roast from photos on the web as you know....

          Thanks guys 8-)

          Will let it roast for 4-5 days as I remember Mal saying something about it in another thread. Also based my roast profile on his suggestion in that thread ;-)

          I didnt think it was going to turn out as even as it did. The beans were quite different in size - some where very small and solid looking, while others where bigger and fuller. I was expecting a very uneven roast. So I took it nice and slow and stretched it out.
          As for where it sits on the CS roast card, not sure as I dont have one - I missed out on beans in January and getting a card. How do I get one?
          But looking at the card thats on this website, Id say its a 10. If I can get a CS roast card in the next few days Ill be able to do a more accurate comparison. This will be great.

          Cant wait to cup it.

            Hey there jb,

            Its a bit hard to guesstimate colour via photos on a monitor unfortunately. The new Member Cards have only just become available and are shipped with any bean order (not starter packs though) from the last BeanBay we had. So, if you order some beans at the next BeanBay your new Member Card will be included automatically.

            Anyway from your description, Id reckon your roast is going to be nigh on perfect for the Ismaili and youve really got some great coffee to look forward to. From what Ive read about the current crop of Yemen Ismaili, the fruity notes are not as prevalent as past seasons but the combination of spice and rich, dark chocolate still make for an awesome brew. Gonna be hard to wait it out mate ;D....

              Mal,

              It was too hard to wait it out mate. I gave in last night, only 2 days after roasting. I couldnt resist as the smell of the beans every time I opened the cupboard with the bag theyre resting in was overwhelming...and it tasted amazing. :-)

              There was a lot of crema (around 80%) in the pour which settled to a good solid head several ml thick.

              As an espresso the taste was very smooth and velvety, rich and spicy at the start with definite chocolate flavours that dominate the taste towards the end. A lot of cocoa dark chocolate flavour there that is a real treat.

              I made a latte with the Yemen and all I can say is it’s in a league of its own in milk. Again, at the start, there were fruity/spicy flavours that came through followed by dark chocolate flavours that blend in with the spice. The addition of milk really brings out the dark chocolate flavours. But in milk, the choc flavours blend in remarkably well with the spice and it makes for a truly unique tongue tantalising experience I havent had before. It’s an amazing flavour combination.
              The flavour is very full and lively whereas comparing it to say Ethiopian Sidamo (which I roast to bring out the chocolate flavours) is very chocolaty but a flat chocolate as it doesnt have the spice.

              The interesting thing is how good it tasted just 2 days after resting. I havent bean home today to taste it again. Will definitely be firing up the Gaggia tomorrow morning for another drop of this truly great bean.

                OK, Ive bean (pun intended) tasting this over the past few days at 5, 6 and 7 days post roast.
                The pour is giving a nice thick velvety crema. Its not 80% as at day 2 but now about 40-50% settling to several millimetres thick. So its settled after a good rest as you would expect, but settled very nicely.
                The flavours have mellowed out and the spice has been tamed. At day 7, the fruitiness and spice are at a good balance for my palate without one being more dominant than the other. One things for certain though and that is that the brew is super smooth and very rich in chocolate. This is as an espresso. I dont drink lattes much but tomorrow and over the weekend, Ill try it in milk and see how the flavours fare.

                  Mmmm,

                  Sounds like youre having some fun there jb ;D. A good Ismaili is definitely a bean that stands out from the rest, no risk about that. It is also one of those rare beans that retains much of its intensity for quite a long time so it is possible to continue enjoying its delights for up to a couple of weeks.... Absolutely one of my favourite beans 8-), but then again, I seem to have a lot of favourite beans since joining the CS Community ;D and sampling all the wonderful beans that Andy very cleverly obtains for us,

                    Are these the same as the Yemeni Mocha Ismail?

                    Need to buy a roaster too. Gene cafe/ I rosto.

                      Depending on availability, you can buy them right here at BeanBay time. Members are automatically notified via email when the next BB will be, but I cant say when the next crop of Ismaili will be available as very few bags come into the country and then theres no guarantee that any singular crop will be up to scratch.

                        Are these beans similiar to PNG Peaberry in times for cooking and temperature in the GC?

                        They look small like the PNG.

                          Gday MC,

                          The two bean varieties are quite different, the PNG Peaberry is a relatively easy bean to roast while the Yemen Ismaili, being much harder, is best roasted for a longer time and probably to the start of Rolling 2nd-Crack. The PNG PB I would pull well before 2nd-crack starts otherwise you risk losing the fruity/berry notes that make this such a great SO bean....

                            Just a quick update on how this tasted in milk as a latte. The bean cuts through the milk well. When I say it cuts through, you can taste the choc, but it blends smoothly with the milk at the same time. I noticed that the chocolate was even more pronounced in milk than as an espresso.

                            What I really liked about it though was the subtle spice flavour that came through that added another dimension to the chocolaty flavour. It really made the latte more special other than just another mocha flavoured coffee. The spice is not as noticeable in milk as in an espresso, but it did lift the flavour to make it more than just another mocha flavour milk based coffee. Very nice.

                            One thing Ive appreciated about this bean is the lesson it has taught me about letting roasted beans rest for a longer period instead of the usual 2 days. Ive done this with some Ethiopian Yirg and Tiger Mountain Ive roasted since and have been rewarded by letting them rest at least 4 days. The flavours mellow and the coffee is not as bright so Ive been better able to pick up on the subtle flavours in each roast and bean variety. I guess longer resting periods work for my palate.

                            Now that this has been offered in Beanbay tonight, I will be interested to see what flavours other CSers get from their roasts.

                            I should get my CS membership card this month with my Beanbay purchase I made tonight. So Ill have a roast scale to use :-) I will roast another batch in the coming weeks and see where it sits on the scale.

                            To those CS’ers who bought some tonight, happy roasting with your batch. Remember, roast nice and slow and youll be rewarded.

                              Cant wait to test it out...

                              Ill have to restrain myself. I usually cant wait more than 2 days before tasting. Saying that, Ill probably give in and try it anyway.
