    I roasted a batch yesterday Id promised the guy from the cafe Im currently buying my coffee from.
    I told him I wouldnt give them to him until at least day 3 post roast to allow them to degas and prevent him from using them any sooner.
    Hes a curious bugger too.
    Her swears hell open them as soon as I drop them in.

    Im thinking that Ill keep peaking in for the next day or two and then Ill let them rest (only because this was my first batch and Im a curious bugger  ;D )  Im sure the novelty will wear off eventually  :-/

    hey mate...Id stop opening them up until you actually use them. Maybe once a day to let out the CO2. What you may be doing is accelerating the staling process.

    Im keeping the beans in some small air-tight containers (which I am opening 2-3 times a day) and keeping them in a dark cupboard.

    Sounds like Im on the right track (keeping fingers crossed) and will see what happens over the next couple of days (the suspense is killing me!)

    CQ - It can vary depending on bean and roast level.
    I find with lighter roasts, it takes a little longer to get to what were conditioned to regard as the typical bean smell.

    From the sounds and looks of your roasts, I would doubt very much that you have wasted your beans.

    How are you storing them?
    I usually put them into an airtight container and either open it at regtular intervals over the first 48 hours, or leave a small opening for degassing.

    Other methods are using specially designed bags with one-way valves, or a simple glad ziplock with a small hole in it.

    Id say that 48 hours+ and it should certainly smell like coffee, but it needs to be out of direct sunlight and certainly in an airtight container by then.

    Alert!!! - stupid question imminent from a home-roasting newby!

    I roasted my first two batches of green beans yesterday (see -> http://coffeesnobs.com.au/YaBB.pl?num=1182060056) - 300 grms of S.O. Australian Capricorn Estate in each.

    The first batch reached FC at 8:30mins, SC at 12:30mins.  The second batch reached FC at 12:00 mins, SC at 18:00 mins.

    The thing is, its now 24 hours post roast, and Im surprised that neither of the batches have yet developed what I would call a full roasted-coffee smell.  I can only describe the smell of the beans as a combination of coffee / roasted nuts / grass (apologies for my technical vocabulary!  :)

    So my question is, at what point does roasted coffee start smelling like real roasted coffee?

    Please tell me I didnt waste 600 gms of green beans?  :-[
