Hey Mike - dont know that my palate is that discerning either, though I was very surprised the first time I dumped the beans at the end of the roast to hear the little fellas going off like fire crackers, just into 2nd crack. This was barely audible whilst in the gene, so I think they continue cooking for a lot longer than 30 seconds. IMHO and could be wrong, I think the roasting process would continue till at least 70* (an arbitrary figure I know)

I just let my beans cool down in the Gene until it turns off itself because I doubt that my palate would know any difference.
When you turn off the Gene the heater is off and with the air cooling the temp drops very fast from 235C. Yes it probably does roast for another 30 seconds after you have hit the off button but just allow for this. If I want to end at exactly SC I still hit stop at SC and sure I can hear a few cracks after this when cooling. If I was to be really pedantic Id hit stop at 30s before SC. But could you really taste the difference?

I can see youre going to have a lot of questions about the gene Sullo
I have only started doing this recently: Once the roasting cycle is completed I switch off the gene and dump the beans in a cooling bucket. I then immediately switch the gene on again and set it so that it can go through its cooling cycle minus the beans.
Ive noted that by the time the gene is at 150* to 140*, the beans in the bucket cooler are almost at room temp.

once youve reached the point of roasting you want ie say 15sec 2nd crack, how long does a gene take to cool off enough to safely remove it to externally cool beans without and damage to machine via heat still there if you shorten time of cool down to remove and externally cool beans?
Or is it one of those time it and see kinda things?

I guess it somewhat depends on where you roast to on the CS scale, and I prefer to roast from 9 to 10, for most beans and lighter for something like monsoon. Most of the roasts barely reach 2nd crack.
The ambient temp is fairly stable at around 20deg, as the gene is set up in an "underground" brick and concrete constructed storeroom.
I know there have been discussions about the time taken to cool off beans in other threads, and think this is a shortcoming of the gene. The rapid cool down process Ive been using is a recent experiment to see if I am able to discern any difference in taste.

Dennis,
I noticed you said you dont do a roast under 19 mins. Is this because of the cooler months? I find if I do a roast at 230* plus they cook anywhere between 15-17 mins.
I just roasted some Ethiopian Harar yesterday and due to the warmer shed conditions at 223* they were done just on 15 mins into second crack.
I also start my roasts from rolling cold in my GC and they cool in the 10mins it takes to come back down to 60*, and all roasts have been superb...

Although after removing the beans you can turn it on again immediately, you are subjecting the Gene to conditions that may shorten its life.

Ive also bought myself am el cheapo exhaust fan, made some mods so it would fit in a bucket and dump the beans in a colander that fits around the buckets rim to cool the beans down - it all happens within 2 minutes rather than a much longer cooling down process in the gene (its only significant downfall). Its a great way to stop further roasting that can sometimes occur if the beans are left to cool in the gene and only cost $25.00.

Looks a lot better Dennis thanks for the advice! Ive never had beens that have needed to be taken past 15 mins before so I guess I was a bit hesitant having charcoaled a few roasts in the past. They arent the epitome of an even roast, though arent far off it.

My machine took 8 min 55 seconds, is this excessive? It does kind of sound excessive to me, should I be worried about it??? :-/

kai viti, Ive never done a roast in the gene under 19 minutes. I suggest you try a batch at 230*/20 minutes, without pre-heating the gene. I would also suggest you use 250gm with that as the amount of beans in the gene does seem to affect temp/roasting times IMO.
Im not saying pre-heating isnt a good idea, but know that the temp and timing Ive offered here as a solution works from room temp.
Give it a go, and let us know the results - resist the urge to cut it short!
