    I have PNG FTO beans that roast up really well... (with BM/HG)

    The crema has a real fizz about it.. even after 2 and a half week of degassing... Which I would have thought was enough sit time.

    Anyone know why they still fizz heaps?

    Probably just the nature of the bean mate and testament to your excellent storage method 8-). What was the roast profile on them, by the way :-??

      did you want the whole profile??
      The general basics are 215c 1st crack after 10 minutes, take it slowly up to 228c just getting into 2nd crack (16minutes) - cool in 60 secs

        Nope, basic profile is plenty mate and looks pretty good from those numbers. Id say the "Fizz" is just down to the bean and your storage method, must be keeping them VERY fresh ;D.... Whats the brew taste like? Thats the most important measure of quality after all,

          oh yeah... tastes great! (if i dont mind saying so myself!)

          Just 1/5 coffee and 4/5 fizzy crema... but if its just the bean then, coolio!

          I keep the beans in the black zip lock bags with the valve so they should stay pretty fresh
