  • Any roasting tips? Decaf Mocha Java

    Im contemplating roasting a 600 gram batch of the Decaf Mocha Java that featured in the recent Bean Bay. As this will be my first attempt at roasting decaf, any pointers / experiences would be most welcome!

    It becomes very dark and you hands get blackish powder on it if you dig in it for too long. Thats only at SC.

      Listen very carefully... as the cracks are very faint. You need to watch it... as the colour of the beans are misleading...

      I tend to pull decafs just before 2C to aim at obtaining some high notes in the flavour.. Generally the High notes are mutted in Decaf

        These are great beans, go very dark. Strangely enough even though people say they are hard to hear, I have not had any trouble hearing either crack. I take them just to first snaps of second crack.

        As has been said, the powder goes everywhere.

            Hmmm...black powder....Hmmm, carbon black looks pretty similar eh!! ;D ;D

            Ive done three roasts with this bean from the latest batch, all 500gms. The first I let go to rolling 2nd........wrong!!! (hooter sounds and one ton anvil flattens b4b). Next roast was removed just after rolling 1st.......wrong!!! (hooter sounds and one ton anvil flattens b4b). Finally, third roast is removed at the first sounds of 2nd crack.....right on!!! Your prize tonight b4b is a tad over 400gms of smack-on Decaf MJ!

            There isnt much time lag between the end of rolling 1st and the first cracks of 2nd, which is also fairly faint and the first roast let go into rolling 2nd was definitely burnt and carbonic. Its not very helpful when the beans are already on the brown side to start with. One to be careful of.

              Glad to hear that youve figured out how to roast these unique looking beans. As a matter of interest though, do you back the heat off after FC has a Roll on? With these beans, as with any other, I think you should try to aim for a 5-6 minute gap between the end of FC and the beginning of SC, or your desired roast colour. If you have a Thermal Monitoring DMM, you need to aim for a Thermal Ramp of about 3-4C/minute, as this not only improves the beans flavour development but allows you a much higher degree of control over the roast.

              Tell me to go and suck eggs if youre already doing this : but hope it helps a bit,

                I have had 5 cracks at the Decaf Mocha Java using my hottop. My first effort went towards the end of second crack and it was terrible. The second roast went towards the middle of the second crack and was better. The third effort I didnt even hear the second crack (they are pretty faint with decaf after all), so I waited for a slight shinyness. These were okay too if not a bit biiter. The better roasts were roast 4 and 5 which were mid 1st crack just when they start to smoke.

                The above are rough notes as I dont usually drink decaf. I merely sampled each roast when making my wife her coffee. If I was to drink it more regularly I may have a very different opinion of the above roast profiles. But if smell alone is anything to go by, I tend to think that they enjoy a mid roast rather than going too dark.

                  What is the black powder and is this applicable to this bean?
                  I have done over 10KG of decaf colombian beans over the last year and have never noticed a black powder.
                  I generally pull the beans at the onset of 2nd crack and the friend i do them for says this is much nicer than what he used to get when buying beans at the market or Decaf from coles etc. as he says they tend to taste alot more bitter and burnt.

                  The darker colour, no chaff, and quieter cracks certainly took me by surprise the first few roasts i did.

                  Hopefully this bean will be available in the next bean bay as i am after a few more Kilo.

                    Hi all

                    I have just roasted 100 g of these in my Gene Cafe. I didnt even hear FC or SC! Normally I can hear these and I listened intently as this thread suggested they were quiet. I used a setting of 235 C and ended at 17 mins once I saw the beans were relatively dark. I definately need to end earlier though.

                    I presume that the cracks are fainter as maybe these beans are drier, i.e. have less water content, due to the decaf process. But then that woudl only account for FC being fainter.

                      Hi Mike,

                      I can certainly hear the first crack of decaf using my hottop but then these units are pretty quiet. Second crack can be harder to hear but only because first crack generally rolls into second crack and judging the two can be difficult. But yes, the cracks of decaf are pretty faint so you do need to listen much more intently than you do with regular beans.
