    Re: Instant Coffee

Great to hear Linda..... I will hopefully be joining the ranks of the very satisfied CSer soon, when I get the Bezz finished off and up and running. Plunger coffee is good (especially when you use some of Andys GOLD Blend..... simply superb coffee 8-)) but when it comes right down to it, I really do prefer espresso so cant wait til the big day arrives.

    Happy brewing....

Hows the Unico going Linda? They sure are one beautiful machine..... 8-)

    Hi Mal!

The Unico is going superbly, thank you! ;D I could not want for a better machine, for ease of use and for the sexy looks XD. I had a few teething problems with it and the Mazzer but now I am so confident when I get the most awesome looking crema and taste that comes out of it!

I still stand there and look at it and ask myself why it took so long to get one of these...I am indeed a proud owner.

I see what you mean about colour rather than time.
I hadnt thought about it that way.

Dont panic though, I only went 1 minute into second.

Are you sure that was what was meant TG :-??

My experience with several PNG beans has been that they roast quite darkly even before reaching SC, ditto with some Colombians. Its all horses for courses naturally enough but I cant help but believe that going two minutes into SC with these beans will destroy them....

A profesional roaster I spoke to a while ago was telling me that PNG beans could be roasted darker without too many problems.
Ive roasted my next two batches of Kimel to about 1 min into SC to see how they go.
Early tastings dont show any bad signs.

Yeah, I dont normally roast my beans that dark but I found with the other beans that the darker roast was nicer to drink immediately than a lighter roast. The peaberry really didnt like that so Ill keep it for when I have time to let my roasts degas before drinking.

    Spot-on Linda 8-),

My fave roast for these lies between about 30 seconds before the first snaps of SC and the start of Rolling SC, depending what I want in the cup at the time..... Never ever go past the start of Rolling SC though for the reasons Linda has mentioned above, I believe it just murders the beans intrinsic qualities and thats an awful waste .

Hows the Unico going Linda? They sure are one beautiful machine..... 8-)

    All the best ,

    Hi Steve!

PNG Peaberry is like that when roasted well into a darker roast. It does actually prefer a lighter cook, say just on the onset of rolling SC....which brings out its really nice nutty flavour.
And it likes to rest around about 5 days post roast.

I have roasted it a dark colour with an oily sheen (thats when I first started roasting) and it was bitter.

An influx of visitors tends to run down ones supplies, I got perilously low a few weeks ago and had to do a double roasting session to get stocks up to an acceptable level again.
The quick roast sounds like a good idea, definitely would have been better than the supermarket swill!!!

    Instant Coffee

I had such a major influx of coffee drinking visitors over the holidays that I was continually running out of roasted beans. I ended up roasting 100g batches in the popper and grinding/drinking within an hour of roasting.

I found that if I roasted the beans darker than normal so that a bit of oil was showing, and roasted them quickly (5min max to 2nd crack) that most beans were quite drinkable without resting. Better than some stale coffee I tried anyway :-)

I had good results with Tanzanian Ameru and Sumatran Mandheling.
The Mandheling had a really rich red/brown looking crema and was the best.
Yirg and Kenyan AA were both OK but the PNG Peaberry tasted like lemon.

Im not sure if it is the really fast roasting times and/or the darker roast but when I need my instant coffee I find that the popper gives much better results than the heatgun. The heatgun roasts really need to sit for couple of days or they are way too fresh tasting.
Working...
