Due to the recent demolishment of my kitchen Ive been relying on Cold Process Coffee for my daily fix instead of my usual espresso. As a result Ive had to significantly change my roasting profile.
For espressos Ive found that the lighter roasts work dramatically better than the traditionally darker ones. Most beans I end up pulling well before the onset of 2nd crack.
Doing the same roast for use as CP I found the resulting coffee to be rather flat and flavorless.
After experimenting with a variety of roasts the conclusion was unmistakable. Coffee roasted for CP gave the best taste when roasted *well into the 2nd crack! Farther into it in fact than I *ever take a bean when roasting for espresso.
The roast level thats worked best so far is taking the beans to just past the peak of the rolling 2nd crack. Continuing the roast until the rolling 2nd crack starts to subside with several seconds between cracks. Way, WAY too far for use as espresso for my taste.
I have the feeling that this may also apply to roasting for brewed coffee, but to a slightly lighter roast. Anybody experimented with this?

I find it a wonderful form of coffee with many advantages and it has been my normal summertime beverage of choice now for 25 years. ;D
