  • Poppers Vs Pan Roasting

    Hi ,

    I have been doing some experimenting roasting using a Popper and Pan roasting .
    With the Popper I used it as is with various amounts of beans(80-120g) and also attached a chimney to extend the roasting time I got it up to about 12mins for 2nd crack .
    I also tried pan roasting and have roasted up to about 400g of beans at one time , roasting time to 2nd crack was about 35mins .
    My initial thoughts are that pan roasting produces a better tasting coffee . The popper certainly produces a better looking bean quite evenly roasted but I felt the taste of the pan roasted beans was certainly better . I was wondering what other people thought.

    The proof of the pudding etc.... If it tastes good, or even better than what you are accustomed to, thats fine.

    But the general consensus is that if youre roasting beyond 20 minutes, at an obviously low heat, instead of roasting, you are baking the beans, giving them an off taste. Of course, if youre using a high heat, they would have cracked long before 20 minutes and would certainly be cremated.

      Paul, I use both methods, and tend to find that the popper (electric) method provides more evenness and a brighter tasting bean, and the pan method results in greater body and finish. I have been too lazy to get off my butt and buy a proper pan (I have read the virtues of getting a cast iron pot, but havent found one cheap enough yet). I currently use a frying pan/skillet type pan which is not suitable - to agitate the beans appropriately often results in beans flying everywhere.

        If you want an enamelled cast iron pot, youll pay through the nose.

        Look in a camping shop and select a cast iron dutch oven. They come in a range of sizes and are quite cheap.

          I have a chimney on my popper and by 6 minutes the beans are very dark and oily. By 8 mins theyd be incinerated. Im getting second crack at 4 minutes.

            Thats funny Ron because I use a popper with a chimney(Black and Decker popper with a soup tin) and roasting 100-120grams first crack usually occurs at 4-5 mins and 2nd crack can take up to 10-12 minutes depending on the outside temp. I have never gone into the rolling 2nd crack as many have described. I just wait until I hear 1 or 2 snaps of 2nd and then stop the roast.

            Have you tried roasting outside on a chilly night?

              So, I have heard of the chimney idea, but havent seen it - how far in do you insert the can or tin?

                Hey Ron,

                My popper also rushed through to second crack in under 5 minutes. This was a chief brand from myers. Suggestions have included longer power cord or variac to reduce current but I found heat guns produce a better tasting roast with more control and bigger bach size to boot. (my normal batch is around 800grammes). The popper is for emergency use only

                  I too use popper and pan. I find the popper roast to be more even, but resulting in more acidic coffee, the pan gives a more rounded taste, but harder to get an even roast. My popper is a made-in-China "Chief" brand, roast time usually around 9 min for about 100g of bean. My fry-pan raost usually finishes in about 15-17min, for about 350-400g of bean. I like the batch size of the fry-pan, and now seldom uses the popper. Someone mentioned cast iron pan, I am not so sure, it would be way to heavy to shake about in a saute motion.

                    Hi Ron,

                    What quantity of beans are you using for each roast batch? Sounds like you need to reduce the batch size a bit, say 5 grams at a time until you can get your roast times out to at least 8-9 minutes. The resulting roasts taste much better, I can vouch for it [smiley=thumbsup.gif].

                      My roasts are around the 5 minute mark more or less for second crack. Generally the roasts come out excellent.

                      Sure it would be nice to get the roast to a longer time but my popper seems to do the same times from 80g to 120g.

                      i use the Hottop now but I think the popper will still get used sometimes.

                          p38arover, the reason I have been given (by FC) why smaller batches increase the time is due to the smaller mass generating less heat than a larger mass - I think it is due to exo-or endo-thermal conductivity or some such thing. Think about a group head - the 5kg E-61 group will maintain more heat than a smaller group.

                          Possibly doesnt make sense, but I have noticed a 70gm popper roast will take longer than a 100 gm roast.

                            Less beans let the hot air through, more beans trap hot air in.

                              Absolutely correct, Monti. Its the heated air which does the roasting, so if that air gets trapped by a mass of beans, things get pretty hot in there. Whereas just a few beans will let the heat escape.
