Umm, given that there are several different Vodkas which could be used maybe we should all get together and compare them all at once for a definative answer to the best cooling method :-)

Hmm youd need a good vodka for the purpose, not a grey goose (beans would taste of licorice) or smirnoff red (harsh)......maybe the slightly watery......absolut (blue label) or belvedere.

I only use filtered water coming out of the fancy UV water filter I bought last year, so it shouldnt leave any residuals on the bean.... that what I am hoping anyways.
Ill probably make a vacuum or fan based cooler in the near future, combine that with hydro cooling Ill be able to cool it to room temp in less than a minute.
Maybe we should make this a challenge, Bean cooling competition anyone? ;D

I recon you could get similar results if you place the roasted beans in a bowl and then place that bowl (like a boat floating) in a container holding water and an ice brick
Stir the hot beans the heat will be absorbed by the cold liquid under
Its sort of a boilermaker method red hot steel plunged in water but modified for dry cooling

I have an old (25 yrs?) Sadie vacuum cleaner.
Basically its a motor inside a big metal can.
Industrial strength really.
Very little plastic anywhere.
Heat is not a problem with it, as I understand it would be with a typical modern house cleaner.
And the only engineering was cutting a whole in a plastic bucket, which holds a colander in place of its lid, to dump the beans in.
The Sadie came with two sets of hoses and attachments.
The typical small diameter household ones and oversized workshop ones.
The large hose is about 3" diameter.

I dont suspect it - I know it.
The guys that say its negligible may typically use just a quarter of a cup per 5-6kg of roasted beans - no more!
If youre going to test it for yourself, I dont know what sort of scientific equipment you have (an entry level moisture meter for this purpose costs $850, so I dont have one!), but suggest you might need to dump the beans directly onto your scales, then take note of the weight before and after quenching.

I suspected that firstly as well Dennis, but the guys that does it says the weight gain through hydro cooling is almost negligible. I will prove that with my next batch as I will weigh the beans after cooling. I have a scale thats accurate to 0.1G so if theres any weight gain it should be able to pick up.

Yeah I have thought about doing the Vacuum thingy as well but it does require some sort of engineering and the risk of damaging the Hoover with all that hot air running through it. The hydro path just seems to be so much easier as all you really need is a spray bottle. Plus it has the ability to do it much quicker than 2Mins if go crazy with the spray bottle! ;D
Plus it puts on a great show with all that STEAM!!! Woohooo!!

Water Cooling, Great Results. anyone tried it?
I was on SweetMarias.com and one of the articles suggested to use Water to cool the beans down; its actually just to spray a fine mist of water during the cooling process, NOT to immerse the bean in the water.(although I think that will cool it down even quicker ;D ;D). Then I did some research on the web and found that ILLY uses the same technique.
Anyway, I had a go the other day and it went surprisingly well. Got the beans cooled down within 2 minutes compare to 5-6mins it use to take me.
Heres the way I did it.
Pull roasted beans off heat into a metal colander (make sure its metal and not plastic, unless you want molten plastic flavoured beans ;D), spray the beans immediately with fine mist of water, 3 or 4 sprays will do it, and watch the water turning into steam almost immediately. Stir and Stir, and then spray a couple times more.
Do that repeatly until the beans doesnt burn your hand. All done within 2 minutes.
Initially I thought the bean may absorb moisture in the process, but having done that there is no chance of that happening as the water turns into steam almost immediately and theres always oil on the surface of the bean to resist the water.
I guess itll work even better if you have fan cooling.
So whats next?... Nitrogen cooling?! ;DTags: None
