  • Seasonal Change?

    Not sure if its just a WA thing but just noticed a local brand has become harder to produce microfoam with again - bit like back in Feb/March. Could this be the change in feed/season - we just got our first rains here in about a year!?

    Anyone else noticed? Ill go find my 1st beanscene too - I think the milk article covered the times of year this hapens....

    During my uni student days I worked as a waiter which included a lot of barista work. Here in Adelaide we definitely noticed differences in the milk during the year. During the cooler/wetter times of year it was much easier to texture the milk and produce rich microfoam. Towards the end of a lot hot summer we will dread it when a table would order 6 caps as it was a real challenge getting decent foam. I guess it just comes down to the amount of grass/feed available to the cows.

      Presently we have 115 fresh calved cows in the herd of 300. Our milk protein is 4.5%, and the fat is 3.5%. The 115 freshly calved cows are producing higher protein milk than in the previous 3 months when many of them were nearing the end of their lactation.
      Hence the reason why at the moment our milk froths so well giving us good microfoam on our coffees.

        I know this is an old thread but thought it worth mentioning that Ive been having problems steaming milk over the past few weeks, as OlSmokey suggests its that time of year, transition from summer to winter.
        The problem seems to have resolved its self and all is back to normal again.
