    i was taught (maybe incorrectly)! that to only heat soy milk to 50 deg as it has a lower boiling point and therefor can scald...is this correct????? :

    Yep this is mostly correct - not a lower boiling point but a lower scalding point -soy tastes nasty after around 55C. However most of your customers will still want it "Hot" *shudders.
