    IMHO this is taking it too far, fresh milk is important but technique is far more important to foaming ability and there is a number of other factors that I would consider to be more important than freshness (temperature for one). I will agree with the end of the milk bottle performing differently to the remainder of the bottle though.

    Milk Freshness is extremely important for good mircofoam. We have a fridge that is only for milk and we have also covered the front door so light doesnt come in. Also we notice the milk sitting on the bottom of the fridge isnt as good as the milk on the top shelf.
    Milk will foam better at the end of the bottle because the milk is heavier at the end.

    For me its not the micro-foam that changes all that much--its the taste. Once the milk gets a bit stale I find it hard to get the sweetness in the cup.

    I think there is a pretty rapid decline- at least in taste and perhaps texturability as well...

    I find that as milk nears use by date it seems to rapidly lose the sugars and taste more and more cardboard like. My milk purchases are usually dictated by longest use by date

    On my home unit, I find little difference from day to day... On our restaurant machine, if the milk has been sitting around for a couple of days its harder to maintain consistency...

    Hi Petar,

    I experience the same but usually after 4 days (since the wife buys in bulk), 2nd day is usually good.

    I always buy the milk with the furthest out expiry date (yes I am the guy with his body leaning half way into the fridge at your local supermarket).

    Hi Petar,
    From my experience freshness of milk is very important (particularly with certain brands). Over the years I have worked for many cafes which get their milk delivered once a week and I can tell you right now, without a doubt in my mind, that on the day it is delivered it textures the best and tastes the best. Over the following days you can easily distinguish the drop in quality of texture and taste. I now make sure milk is delivered each day where I work and consistency and quality are much higher.

    Milk is an emulsion, so perhaps after the 2-3 day mark, you are getting less of the cream poured into your pitcher - since perhaps it has already been poured out on the previous days.

    The milk freshness shouldnt have too much of an influence in the timeframe you are talking about. Even if your fridge temp was way off it still shouldnt affect its microfoaming ability. What sort of milk are you using?

    how important is the freshness of the milk to getting consistent micro foam? Im just finding it hard to get consistent milk texture..

    like we buy 2ltr bottles, which usually last 2-3 days.. i notice on the 2nd n 3rd day my micro foam is crap.. is that it?
