No changes with mouth holding, not yet anyway!
Okay, well Ill give the skim milk a miss and hope that its just the time of year. In my 20 years of frothing milk (I learnt in my teens in good ol Rundle Street when real italians owned the cafes) Ive never seen it like this - but its what youd expect with the type of weather in Adelaide.
Would much rather it be the milk than the machine though!!

Just remember Sue, that no matter what label or processing the milk goes through, if the cows dont eat green grass, the milk will not foam well.
Also, ensure you clean the steam wand thoroughly, including reaming out the steam holes. A change in pressure can do this too.

Thank you so much for your reply.
Normally I’d agree with you re. the time of year, lack of fresh feed etc. however, I have changed from an organic non-homogenised to a commercial supermarket milk to a specialist coffee milk with no change in froth results. Maybe, I’ll try a low fat milk (even though low fat anything should be banned!) to see what happens.

If the milk sort of looks right as you are steaming, gets hot at the right rate, but then collapses into large bubbles--it is the milk, as 2mcm says.
As soon as the cows dine on dry feed the ability of the milk to maintain microfoam disappears.
Try and get "imported" milk from a place that still has green grass for cows to eat. (I like the A2 and find it very consistent--I think it comes from Queensland.)

The answer will lie in a change of milk...Try something else. Protein levels can decrease at this time of year and that makes it harder to get a great result.
