    I am a manager of a small cafe and am having losts of problems teach some of my ladys how to properly froth milk; i have shouded them how to do it my self, made them watch videos and nothing seems to work. its almost like they just dont understand the point that the way you froth your milk really definds the flavor. at this point i am at a wall any suggestions on how to make them get it?

    Hi Rickenbackers,

    Id recommend that you pay for some quality training- perhaps at an alternative venue.

    Make a day or evening of it and have a professional trainer provide a course to your brief.

    I suspect that if there are issues with milk texture, there will be many other areas which can be improved as well. I have never seen a godshot come from a button pusher who cant texture milk

    There are CS sponsors who provide training as well as quite a few other great alternatives for Aussie clients. I am sure that there must be some similar providers of good training over your way. You just need to find one.

      Is it just milk frothing they arent able to learn? Not everyone is a good teacher (nothing personal), and so I ask.

      I have recently abandoned the thermometer and am using a hand on the side of the pitcher. If its too hot to hold comfortably then the milk was over-frothed. This might give them one less thing to watch and make it easier to pay attention to what is going on.

      Did you have them actually sip properly frothed milk and compare that to under or over frothed?

      Or maybe just have the short bus pull up, have them hauled off, and get some help with IQ in at least two digits. ;-)

        either off premises
        or some customers find it more comfortable learning at their own place on their own machine, afterhours,
        your coffee company mite be able to assist

              Perhaps as part of your hiring process have potential hirerees do a cupping of good/bad microfoam. If they cant see and taste the difference then odds are pretty good they wont be able to produce a good product. One has to be able to differentiate between the good and the bad in order to produce the good.

                Do some latte art and tell them "if you dont get the milk right you WILL NEVER be able to do that!!!"
                maybe your problem will change

                      I find that a lot of our new staff tend to. Its not my cafe, but I tend to end up doing the training. Though generally they arent older than 30 or so, not that im being ageist at all, but the older people get, the more stuck in their ways they seem.

                      Thats actually not a bad idea. But perhaps not run it all the time. Maybe once week per month or so, set a design you want poured and for each customer comment on their coffee they get a mini bonus.
