Re: Did anyone experience this: sudden milk texture change?

Farm house has been perfect for as long as I can remember. I use it 6 days a week making coffee at work.

Pura on the other hand including Pura Lite Start has been terrible!

Re: Did anyone experience this: sudden milk texture change?

Dairy Farmers had trouble getting supply from North of state during the fires so substituted Pura in their delivery. Noticed change straight away Now starting to get some problems with normal supply although not so bad. Seasonal thing you have to live with but frustrating.

If Farm House is still ok then I must be doing something wrong... Just ordered a 4 hole steam tip from cofffeeparts so hopefully that will make a difference.

Try A2. Its working well at the moment when the local Coles supply has turned jolly awful for a seasonal spin. Textures completely differently.

Ive got Coles brand for brekky, and A2 purely for coffee.

Also the Norco Capo (only available from cafes) works equally well as A2 - I buy that for my work coffees from our local cafe, and despite their usual horribly expensive cafe mark-ups, the Norco Capo is lower priced than the A2 from Bilo/Coles.

Well, I just got the same problem in Perth. My favourite milk is an Organics brand full cream and today it just wouldnt texture properly. The other "standard" milk worked fine however. I did notice that the age of the organic one has 4 days left for its use by date. Can this effect it ?

Re: Did anyone experience this: sudden milk texture change?

Milk is not a 100% fixed and stable product... Even UHT etc changes over time and once opened and subject to external influences undergoes all sorts of changes.

The same for any Milk... From the time it leaves the Cow it is under any number of influences and undergoes change by the minute... The issue is that some changes will effect different properties and at different rates...

Thus you can not say that for organic Milk that has 4 days left for its use by date, is not good, unless the issue is consistent and repeatable... It might have been some other factor that caused it to change...

It is all variable... It is never BLACK and WHITE.

Yep. Youre absolutely right cos Ive used the same type of milk with only a day left before the use by date and it textured fine. Its really the first time Ive had issues with it hence probably not repeatable or consistent. I guess the question should have been more like, does fresher milk in general texture better ? I guess the fresher it is the less time its had to be effected by different variables.

Re: Did anyone experience this: sudden milk texture change?

As AM says above.... it takes very little to upset the qualities of milk when you want to texture it....

I have found huge changes when it is left out of the fridge for a while (daughter making a milk shake and leaves it on the bench.... or SWMBO making a white sauce and leaves it out next to the hot stove whilst adding it slowly to the sauce).... I always take it out of the fridge, pour into the cold jug and then straight back to the fridge.

Ive also found the same brand of milk (with the same "best by" date) from a supermarket and the local shop have different texturing qualities - from day one!

Is the supermarket milk left out of the fridge for a while when received? Is the fridge in the supermarket not as cold (open display unit compared to closed fridge at the local shop)? Is it the fact that it takes far longer to go from the Supermarket fridge to my home fridge than it does when milk is purchased from the local shop?

Whilst the milk is well within its "best by" date in all cases.... texturing qualities can vary quite a bit.... even quickly.... if the milk isnt treated with the utmost care!

Add to that the seasonal variation (caused by changes to the cows feed)..... and getting perfectly textured milk consistently is a real challenge!

Yep... An some times it may not be you, but transport / the shop or what ever... Thus two containers of milk might perform differently even when being used at teh same time..

It is not a major issue / an every day event... But if your aware, then you can manage the outcome and recognize the symptoms and realize that it may not be you or the machine... Then again some times it is

We use Pura at work, all dated March are terrible.
If anyone in the bizz could give me a suppliers number to get some A2 or anything that wont be as bad, it would be much appreciated.

we use HomeBrand from the local Woolworths and since last week i cannot make microfoam ... it just goes from cold milk to warm/hot milk with a few big bubbles on the top.
thought it was just me, until i found out a few friends of mine have the same problem with Pura milk.

from memory we had such an episode last year too, lasted about 5-6 weeks before the milk returned to normal/foamable.

                          > Just opened a new bottle this morning for a second brew looked more like a milkshake than nice textured milk of the one before  > Steamed another lot of milk to see if it was me as normally my Solis is great with the same consistant good results  :P

Have a read of this http://www.weeklytimesnow.com.au/art...905_dairy.html seems there may be a reduction in protien caused by the heat, time for ice vest for the cows I think  :

UPDATE: Went to the Supermarket and got a bottle with the latest expiry date (same brand Sungold) on it and all is now well again. 3 happy lots of MF 8-) Tried yet another with the other bottle and still milkshake country

Using only Farm House milk at the moment and furiously experimenting with different tips and plugging the tips with toothpick in all different configs all seem to yield the same thing... the amount of stretch I get varies and I get still get something resembling a rosetta but it is accompanied by bubbles which when left for some time will start to make its way to the surface. Havent seen a silky microfoam for a while but Im not quite ready to blame the milk yet because there is some nagging feeling that it could be my technique...

Perth milk suffering too - usually reliable Harvey Fresh just gets soapy bubbles - same with a supermarket brand, might have to try the local South West premium brand to see if any difference?!
