  • Bezzera Zo2 - Milk frothing problems

    I have purchased a recon zo2 - draws a nice shot but I cant seem to get the frothing right - heats the milk fast but lots of silky foam - no way known
    Seems to have a multiholed steam head - Im used to a single - could this be a problem or is it simply operator error

      followed the thread and have used about 3 l of milk with no real success - the milk always heats too fast to get significant amounts of foam - i.e. the foam is ok but theres not enough for one cappuccino

        As per KKs instructions in the link, start with the tip just immersed in the milk, not buried in it, so the stretching starts straight away. Listen to ch-ch-ch sound and make sure you can see the milk expand - but not too much - 20% increase is plenty then dip the tip in deeper to stop the stretching but only a little deeper until the milk is heated.

        Try adding a tiny drop of ordinary detergent to water and practice stretching that so you arent wasteing milk (but dont make lattes with it   )

        It took me quite a while to get the right technique but I had the opposite problem of over-stretching. Get someone to demonstrate on your machine if possible.

          thanks will persist with detergent - my wife can hardly drink another coffee and the kids are sick of warm milo
          might be easier for a slow learner to go back to a single hole nozzle as in my old rancilio

            guessing but your old machine having only 1 hole in the steam tip was a domestic machine. you now have a semi commercial machine which will have more pressure. notice how you can control steam pressure. slight turn of handle =low pressure vs complete turn =full pressure. if you are using a small jug (e.g 400ml) and open the steam valve on full blast then I can imagine little time to stretch (froth) milk before temp is high.
            I suggest buying a bigger jug, half filling it only a practice with steam pressure control, balancing stretching and temp over time.
            get cold milk spinning, then stretch with tip, then heat.
