    I have just started self roasting & the result is just soooo much better than the stuff in the supermarkets, milk I just tried the one I always use Devondale 98% fat free & it froths up great.

    I guess if youre on a winner, stick with it.

    Its just my preference, however, I just loove the full cream milk.

      I always like full cream milk too! If a customer at Tafe ordered skim, Id grit my teeth, smile and say "Absolutely!!!".

      I used to have trouble stretching it some nights, and none other nights. I think it might alse be just me aswell, because Im still rather new at making coffee. I did improve, and have lots more oportunity to practice, as Im going back in a few weeks

        I would think its prob just technique crEMatalica.
        Its the protein in the milk that stretches and as the lower fat varieties have a larger % of protein it should stretch better.
        Taste is a different ball game though and peoples preferences shouldnt be cringed at IMOP. Its not wrong, just different

          I dont cringe at their preferences, I cringe because like I said sometimes I can and sometimes I cant get it to stretch. They can order whatever the hell they like without judgement - I will do my very best to give them a great coffee.

          I did improve greatly towards the end of last semester. I had one customer leave me a tip because I made him a beautiful coffee. (I couldnt accept it, and it went to charity.) He gave me a wonderful compliment, and it was him who made me realise that I actually did improve my skills and actually realise that I do have a passion for making it.

          Im back at Tafe now, and am yet to get my grubby little hands on the machines, but come Monday night I hope to have changed that!

            My Apologies there crEMatalice. I made a assumption, but made an ASS of ME.

            Try stretching it slower, as it should be easier. see the difference and make an adjustment.
            Practice practice practice is the key, and can be different from bottle to bottle

              Ive learned from work in a cafe low fat milk reacts slower to frothing compared to regular milk. This means that you have to immediately start impregnating air into the milk the very moment you turn on the steam knob. Careful not to be too aggressive or youll have large bubbles in them.

              Also because its low fat it does not hold its foam structure as long as regular milk, so thats why you make skinny coffees the last whenever you are making a batch of various different coffees.
