    Dad had a Farm in Qld for a while and going through some old books I found this..

    Milk Contains lipids which are the most variable component of milk., Sterols and Carotenoids and Fat soluble Vitamins. Many things affect the taste of milk and balance or proportion of these contents..
    Type and amount of feed.
    Stage of Lactation.
    Type or breed of Cow..(and physiological condition of the cow).
    FAt content decreases in summer..(feed does not generally affect this)..
    Guernsey and Jersey cows produce more fat than most other breeds..

    Ive been thinking about kidnapping a Jersey cow for a while now... Want to get my hands on some raw milk... not for steaming but drinking straight up.
    Ive eaten way more dangerous stuff than raw (unpasteurised milk) and Im still alive and ticking. Maybe it was the raw milk I drank as a kid?

    Elgaar Dairy milk (from Tas) is pretty damn tasty but too pricey for me to think about steaming. Their creams rock too. All from Jersey cows.

      If you like warm milk on your Weet Bix its better straight from the cow rather than the microwave.

        I love raw milk and grew up with the stuff, so did my kids until a few years back.

        We very rarely get sick (except for the cancer thing) and I would continue to use it if i could get my hands on it.

          Bottled milk bears hardly any resemblance to the real, straight-from-the-cow stuff.

          They are both white, and thats where the similarity ends.

          There is nothing  like the warm, frothy, thick juice straight from the udder before it is pasteurised and stripped of its cream (and everything else other than water.)  The texture alone imparts a fantastic mouthfeel and taste.

          Could probably scrap the steam wands forever!!

            Im with you guys

            Also grew up on a dairy in my pre-teen years and after that we always had a cow or two (always Jerseys, quite apart from their milk they are great animals).... My Grandma used to make the most wonderful icecream from the Jersey milk, never had anything like it since that comes even close. I can just imagine what an Affogato would be like made with this.... Mmmm

              I am a big fan of Jerseys - both the cows and the milk. I found they old jersey cow on our farm was easier to mild with better yeilds than any of the friesians.

              In Queensland they are very lucky to be able to get Cooloola Jersey milk - which seemed to me the best I have ever tasted.

              Over here Bannister Downs and Raven Hill have both started producing premium milks for the WA market - I know Epic is now using Bannister Downs milk for their coffees.

                I was talking to my Aunty today (retired farmer) and we were actually talking about the yummy milk all us kids had on the farm growing up. I can still remember hand milking the house cow - lucky she was a gentle tolerant old darling and she was the only jersey on the farm.

                  We had Holsteins on the farm and I couldnt agree more. Theres nothing like the real stuff fresh from the source!!

                        I grew up on a farm, and my Mum always likes to tell the story about when I was about two, and she was milking the cow. She used a bit pail, that was wider than it was tall. Shed filled that up, and there was still milk in there, so she started on the second pail. I was standing next to the large (full) pail, and the pig (did I mention we had a pig as well as a cow?) trotted up behind me and let out an unholy squeal. I toppled into the full pail of fresh milk.

                        And Ive had lovely soft, clean skin ever since.

                        (Yay, first post, and I got to tell a story.)

                          My god, did EVERYONE grow up on a farm! I think were gonna have to re-name the website "raw milk snobs".

                          Didnt grow up on a farm. Didnt leap into pales of raw milk. :-/ City kid. :P

                            I didnt grow up on a farm but there was a bull in the paddock next door.

                            So Im a country boy.
                            In my day even the bottled milk had an inch or two of cream in the neck of the bottle.

                            A2 - tried it, not worth the extra money.

                              I remember I went to stay on a small farm during school holidays when I was young. They used fresh cows milk and I remember balking at the thought of drinking something that had come straight from the cow without all the usual treatment, plus it was a bit warm. I was convinced it was unhygenic! Obviously I survived.
