    Hello tomasia!

    Ive used different kinds of milk and I have to say UHT works best for me (3,2%). I tried homogenized and it just gives a huge ammount of bubbles which disappear quickly and leave you with a jug of ordinary hot milk. Tried pasteurized, better than homo, but still too much bubbles and froths pretty hard.

    With UHT I almost always get pretty good microfoam

    Thanks everyone!

    I am back to my UHT milk this morning and its just not the same for me

    (lucky I have a little corner store very close so that I can obatin fresh milk quickly and easily)

    I use lactose free for my wife (cold from the fridge) and other than that it always tastes sweeter to me than normal milk, I havent noticed any problems with steaming it.

    Weve used both the UHT and lactose-free milk with no discernible diference. Both produce good microfoeam and taste.

    in my curiosity and lack of fresh milk, i experimented steaming evaporated milk and a solution of milk powder in water. both textured quite well i thought. but yeah, the taste is a little unusual.

    I would think as long as it was cold from the fridge and not straight out of the pantry, that youd have no problems with it.

    Believe it or not, it doesnt matter.....UHT textures well at ambient temperature anyway

    Welcome to CS, tomasia. You should have no probs with UHT- it is also extensively used across Europe. The protein content is "managed" and it tends to texture very reliably...Im not much for the taste though

    Guess who got her first espresso machine for Xmas? (and who happens to be an internet junkie)?

    Anyone have any experience with steaming UHT Milk? Is this a real no no?
    (I ask because we always drink UHT milk for the convenience and this morning I actually bought fresh milk and it seemed to texture a LOT better)

    Was I just lucky or should I be avoiding UHT milk?
