I have been working on ways to improve the quality of microfoam especially with regard to coffee art. I want to raise one thing that I have noticed-however I am not sure if it is real or my imagination. When I initially froth the milk I was taught tocreate a whirlpool. After that I was taught that I should swirl the milk around in the pitcher. Now this is what I notice-if I swirl the milk in the same direction as the whirlpool when I pour it out to create coffee art I just get white goo which results a big fat white blob on the top of my coffee. On the other hand if I swirl the jug in the opposite direction to the direction that I created the whirlpool I can create something that looks like a Rosetta leaf. Has anyone else observed this? It is my imagination? :-?
