    I work on the left hand side, swirl jug clockwise and froth swirl anti clockwise.
    Im right handed, but i pour with my left hand. (for the whole work flow)
    I dont think the direction matters, its how well you swirl your jug so that the froth mixes back with the milk.

    If you leave your milk too long, froth and milk separates and when you try and pour it out, froth gets left behind (less dense, floats) and will all gush out at the end leaving you a white blob of froth.
    Thats why you swirl jug in the first place.

    To solve this, maybe everyone should pour right after they froth, so dont need to swirl!

    I work the right hand side, spin it clockwise, and then swirl anti clockwise. Never had any issues with microfoam. Can do good milk on the other side too with anticlockwise spin and swirl, so dont think the direction affects it at all. Probably just how much care you put into it.

    maybe its cause of the northern/southern hemisphere whirlpools go naturally in different directions. I texture anti-clockwise and swirl the same, working on the righthand side of the machine. Most baristas Ive seen work on the lefthand side of the machine though.

    Might try the other side tonight.

    I am sticking with TGs theory there. Being a little more conscious and observant could give way to getting better texture.

    It may work because you are being conscious of your new action as opposed to being unconscious to whatever small thing you may have been doing wrong previously.

    Ive started to use your method, and it seems to work.....  Cant explain why though, but it works!

    Id guess that it has more to do with your swirling ability in each direction. I know I can swirl anti-clockwise just fine (right handed), not sure I could swirl as vigorously the other way (or left handed). Sort of like brushing your teeth left handed...

    As a check, try whirlpooling in the other direction and swirling in your normal direction...

    Hi there,
    I read your post, with interest I gave it a try and by damned I seem to be getting really nice smooth microfoam, just by swirling the opposite way after steaming. It doesnt make sense but it has worked the last three times Ive tried it. WEIRD ! :-?
    Anyone else give it a try ?

    At work I can make excellent milk on one side of the machine but only so-so on the other!

    I think it is your imagination. I swirl in the same direction my whirlpool goes...always anti clockwise.

    I dont know about whether or not its your imagination but Im tempted to try next time I steam some milk.

    As it is, I happen to swirl in the opposite direction to my whirlpools and on a good day can get a resonable attempt at a rosetta.

    observations in creating microfoam

    I have been working on ways to improve the quality of microfoam especially with regard to coffee art. I want to raise one thing that I have noticed-however I am not sure if it is real or my imagination. When I initially froth the milk I was taught tocreate a whirlpool. After that I was taught that I should swirl the milk around in the pitcher. Now this is what I notice-if I swirl the milk in the same direction as the whirlpool when I pour it out to create coffee art I just get white goo which results a big fat white blob on the top of my coffee. On the other hand if I swirl the jug in the opposite direction to the direction that I created the whirlpool I can create something that looks like a Rosetta leaf. Has anyone else observed this? It is my imagination? :-?
