    They might have been saying it is sealed immediately after treatment. Once it's open to air, it's vulnerable to infection from airborne microbes and must be used quickly, like regular milk.

    Ok maybe they were saying that they don't add anything to Uht milk, that would be consistent with what everyone is saying here.

    you mean the fresh milk that you have to use within a few days?

    Well, my microbiology lecturer said that one is heated in 73 C for 15 sec and UHT milk is heated in 140 C for 3 sec. Therefore, the UHT milk can be stored without refrigeration.
    Just a first year student and i don't really know more than that.

    I was out with a couple dairy engineers on the weekend, both of which come from dairy farming families. Apparently there is no difference between Uht and fresh milk, Except that Uht is made in a closed environment to stop contaminants.
