    Hello,

    I have recently purchased a Silvia and was struggling with gaining the Microfoam that is so fondly sought unitl i practised and practised using litres and litres of milk. I found that low fat (Dairy Farmers Lite White) works the best. Basically, when i start the froth process, I put the steam wand just under the surface of the milk, getting the chchchch noise, only using SMALL levels of steam (dont open the valve right up) then after about 5-10 seconds i then push the wand deep into the pitcher opening FULLY the steam valve which gets the whirlpool going.

    Are you finding this happens? Or am i on to something totally co-incidental?

    Paps, steaming milk with the Silvia is an absolue joy because the end product is fantastic. Velvet microfoam.

    Any sort of milk will do it.

    You can start under the milk and then lower the jug, or with the wand in the chchchchch position but not opened excessively so that it blasts the surface..

    Once you get the sound you want -- indicated obviously by the sound!! but also by the microfoam being produced at this stretching phase, you can open up the wand to get the swirl going.

    Once youve finished stretching, you can either plunge the wand deeper to continue heating.... or leave it at the surface and heat, but that may result in too much microfoam.

    When finished, bang the jug fairly robustly on the bench to knock down any remaining bubles... then swirl it around with your hand.

    Whatever works for you

                Twelve mls or so and Mrs Robusto thanks me :-* There is peace and harmony.

                25 mls of foam and I get a big thwack with the rolling pin across my knuckles. It hurts.

                I consider that a good incentive to try harder.

                      In my case 6 mm foam and Im home....

                      Any more and Im poor ;D ;D ;D

                      Too much foam and it brings complaints - big time (after all a flat white - which is really what my wife wants when she asks for a latte - is just that..... isnt it?)

                              I have a problem with Silvias wand. My previous technique with my old machine was to rest the edge of the pitcher along the wand and gently slide it down as I stretched the milk or changed angles. This steadied my hand and made sure I did not make any dramatic movements.

                              Now with Silvia, there is a little rubber connector on the wand which catches the edge of the pitcher and prevents me making any fine movements. What is everybody elses technique to ensure they have full control over the pitcher.
