    Ive perfected the art of making an all-white art! Thats right, no crema in sight!
    Its taken a considerable amount of time, effort and all-round dedication, but Ive finally gotten there!

    Im also extremely proud of my signature series...where the cremas broken up by tiny white lines which then ends up looking like a signature...gotta look hard at it to appreciate it though!

      I too, am very accomplished in the Niagra Art (where one is concentrating so hard on making pretty patterns, that one does not realise that they have run out of cup!) :-/

      In my distinguished latte art career I have pulled of championship quality blobs, ETs, swirls, trees, and leaves! ;D

      I did manage to pour a,.. well..,,,.. ok rosetta on the weekend. It was at least recognisable as a rosetta!! I showed my partner, and she said "Oh is that what that is called?! Looks like a fern leaf!!!" :

        What I would give right now to see some white in my latte. The crema I get is pretty thick, 20 mm of crema, and it lingers on, doesnt really die down even after the minute or so it takes to get the milk ready to pour. When I pour the milk, it just cuts straight through the crema. At the start of the pour, a little white blob appears, but then gets sucked in with the rest of the milk under the crema.
        Lately, Ive not been getting any white at all througout the whole pour. Is it because I didnt stretch the milk enough? When Im done free pouring the milk, the foam layer that sits on top is about 10mm thick. Taste pretty good, but no art.

          Hi NewtoEspresso.....
          That all sounds ideal to me,.. and my untrained ears,..
          I would only alter your pouring technique from the jug,.. and listen to the professionals here for their advice on that.
          Dont touch the espresso shot, or your milk texturing by what youve just described!! Sounds delicious!!!

            I reckon you might want to pour slow at the beginning (suck the milk down) and push the jug, so that the milk can mix a bit with the crema. It looks and taste great!

            Sometimes ago, I observed Luca to pour a latte and finished with a white-ish topping, a soft touch of foam.... Incredible.
            Of course taste excellent. Today I visited first pour and Davids latte was good too...

            I think visiting good cafe(s) can learn a lot of things.

              Say, what do you mean by "push the jug"? Push it forward to try and get the upper layers of milk/foam out or is it something else?

                Its like dropping the spout of the jug down, it lets the foam flow in with the milk more.

                    I finally did it, my shot from a low res phone but it was not gonna get away, the customer wanted choc sprinkles on the top,

                    sheeeeesh!!

                    Its a bit sad because all the waste milk will no longer be available for third world countries,

                    Ive also done a couplla hearts but i reckon they dont count.
