Noob...what am I doing wrong?

    You can give the coffee a swirl before pouring too, especially if you have a single boiler as the crema can "stiffen" slightly while waiting for the steam.

    The most likely problem is the way you're stretching the milk. This is the most important step in the process and the easiest to get wrong. Concentrate on this first before worrying about any designs. A couple of photos would help diagnose your issues better. Also what machine are you using, what size jug and what milk?

    I've been making coffee for more than 10 years and I still suck at latte art, it's something I'm working on though. I find the key is good preparation don't rush anything, but be ready to act. Stretch the milk when cold then fold the stretched milk as it warms. Let it sit for a little while(long enough to clean the steam wand) then swirl your milk and even your shot just prior to pouring, then start slow, but deliberate and high(you can be using a mixing action at this stage), then bring the jug down very close to the shot and adjust your pour angle and flow to start the steady flow of textured milk exiting the jug. Sorry that's all I've got. Buy yourself a few litres of milk(start with full cream I find it easier) and just keep trying different things till you get started with some success.
