    Hi, i have a wega compact 2 group commercial machine and i need some advice,

    When i try to texture milk with it, it heats up the milk too fast (ive done it on other commercial machines and it took alot longer) so the milk became hot too fast so i hardly have any time to texture and stretch the milk etc

    what am i doing wrong?

    Sandro,

    When you say too fast.... how much milk - and how fast....

    Some commercials are slower..... but my La Cimbali for example will texture about 500ml of milk in less than 30 seconds....

    You really have to have perfect technique or there is no way you can get good texture.....

    And just enough for two lattes.... (about 250ml) is done in about 15-18 seconds.....

    You can start the extraction, get the milk jug, bleed the wand, texture the milk.... and the milk is ready before the espresso!!!

    If this is all too fast for you, you can reduce the boiler pressure (but that will affect brew temperature) or get a tip with fewer and possibly smaller holes.....

    But normal commercial machines are vicious... they have to be to produce the volume of milk coffees required..... The first time I used mine to texture milk I had about 250ml of milk over me, the machine and the floor in about 2 seconds....   :-[ :-[

      Hello, thank you for your reply, it is usually 250-300 ml in a 600ml jug
      maybe i turn the knob too much and the steam comes out too fast? is there a certain "standard" amount of steam or pressure of steam that is meant to come out?

      What i do is i put the wand totally submerged in the milk and turn it on, then raise the wand so it is on the surface to hear the ch ch ch sound without big bubbles forming, then keep raising slowly as the milk grows, then drop the wand again, but it happens too fast on this machine and i have not enough time to do it properly (compared with other big commercial machines ive tried it on)

      Any suggestions would be great
