hey mate, whats happened here is that either the milk it too hot, or its your pouring technique, if you pour fast, which is a free pour technique for flat whites, which i wouldnt suggest then you create large bubbles in the milk which consequently pop.
a few ways to counter this,
1. deliberately pour this way then once they set, tap a few times and it creates a nice freckled effect
2. pour slower using a spoon or spatula to hold back any excess froth, ensure u aim for the side of the cup to slide the milk into the cup not drop it
3. if this isnt fixing the problem then you arent texturising for long enough, so u need to spin your milk slower (aim closer to the centre of the jug) and dont scratch as much. this will create smaller bubbles in the micro foam, making it last longer, as they are flat whites u want minimal froth anyway
3. buy pura or dairy farmers, if you have low air pressue because of high altitude or low protein content in your milk then your froth will collapse faster
4. finally if you cant fix it, then try mixing a little skim into your full cream, or try heating the milk a little, then letting it cool then heating it again... thats one ive heard but never tried

Milk for Xmas
Most of my brews are straight espressos - I only make 6 or so flat whites each week. I use Dairy Farmers "Farmers Best" milk with my Silvia - 600ml jug with thermometer. I achieve nice micro-foam, but the top goes pimply 30 sec or so after pouring. I think it may be milk related?? With Xmas coming and many visitors, I would like to present flat whites that stay creamy in the cup. Living in the Illawarra area, can anyone recommend good milk to use.
On a separate note, how have you all got a tag line at the bottom of your messages with your equipment??Tags: None
