    Thanks all - yep I guess I make a rod for my back with skim. The 2 hole does a much better job with the skim in small quantities - ie for 2 standard flat whites - than the big 4 hole up the other end. I will treat myself to a better quality of milk for the odd shot. In Qld we have Melaney Milk which is from cows up in the Blackall Range (not central qld Blackall but Sunshine Coast hinterland) - and its not P or H either; should all stack up to very good texturing.

    I agree jb, Bannister Downs is the best by a country mile. I uses skim through the week but treat myself to Bannister all weekend and the difference in texture quality is very noticeable.
    PS: The monsoon malabar has been going down a treat, thanks for the roasting tips...........................

    Yep, you hit it in one!!!

    It is the fat content which makes for great microfoam....

    Normal milk = 10g /250ml
    Smart milk = 2.8g /250ml (not really that smart!!)
    Skim milk = 0.3g / 250ml.....

    Ever tried texturing water with white food colouring - and almost zero fat.... well you cant :

    And Skim milk is almost the same......

    A four hole commercial tip will make fine creamy microfoam.... but needs the fat content in the milk to produce the smoothness..... 2.8g will work OK but 0.3g....... heard of that proverbial "pushing s... uphill with a pointy pencil" ;D ;D ;D

    By the way, I use Banister Downs milk..... which is probably a higher (or at least a consistently high) fat content compared to normal milk - and it is brilliant!!!! Epic also use it exclusively.

    Gday Oz,

    As a temporary measure just to see if this is going to work for you..... Jamb a toothpick up one of the holes and break it off flush with the tip. Give it a go and if its good, take your tip up to a local jeweller and ask them to silver solder (ask them to verify that they use Cadmium Free silver solder) one of the holes closed for you. If it doesnt work out, remove the small piece of toothpick and youre back to a 2-Hole Tip.....

    2 hole down to one?

    I have got a 2 hole tip on one end of my FAEMA for small milk quantities and compared to the 4 hole gigantic think up the other end of the machine it goes slow and steady - using it for a couple of months now I guess....but then I cranked up my EM6910 at work and with its one hole tip I actually get smoother thicker microfoam...and can do late art easier to boot! I guess I should try a one hole and see how that goes...any thoughts would be appreciated on type.
