Hi! Im new here. Go easy on me!

    hi to all, you can call me the coffee kid. i have a mobile coffee van situated near Brisbane Australia which has only been on the road now for a few weeks, the set up is new and has been custom built. i have a 2 group wega and a super jolly.
    the fridges and coffee machine run of mains power or the mega power generator depending where Im at.

    Im not a snack van and never will be, i will not be serving bags of crisps or hot-dogs with my coffee (yuk) instead i have homemade fudge made locally in my area and biscotti from Byron bay. both complement the taste of coffee.

    Im not a trained barista as yet, but have had some training with my bean supplier.. as a chef of 15 years i put a lot of effort into getting it right first time ,every time. Im not that good at the art side of coffee and in time i will get better, my first was a heart of which i posted elsewhere on coffee snobs.
    Im new to the coffee business and look forward to being around for a while.

      Hey mate, sounds like a great set up youve got there... Im interested to know how much coffee you go through a day? Do you make your money of the coffee or off the nibbles?

        Welcome to CS CK, nice setup and youve got a good philosophy of serving quality java and biscoti etc to enhance the coffee experience!!

          Great looking setup and that coupled with your passion to "get it right" plus a lot of hard work (nothing new for a Chef of 15 years experience ) will, Im sure, lead to satisfying success. All the best mate [smiley=thumbsup.gif],

            Gday tCK - welcome both to the world of snobbery, and mobile coffee.

            I operate a mobile cafe in Brizzy as well (inner south) - have done so for the past 5 years.

                  Greetings fellow coffee lovers. My first post here since finding the site. Ive been reading and learning a lot but I wanted to make a few posts and get to know everyone. Im in the process of trying to open a small coffee shop locally here, nothing big, just maybe a small place for real lovers of the bean to gather, mingle and try new types of coffees rather then just settle for the "Run Of The Mill" stuff some other places serve. Maybe not much money but its always been an idea in the back of my mind and I think its time to go with my dream.

                  Anyway..........Thanks for having me here.....

                    Where abouts is "locally here" (as far as opening a small coffee shop)?

                    Im sure youll find heaps of info to get you kick-started!

                        If youre close to a military installation, you might want to think about catering for the soldiers too.

                        There was no coffee to speak of when I was stationed at Ft. Jackson and Ft. Gordon.

                          Hey!

                          Been lurking on and off for a while and finally decided to join up. I dont have much coffee equipment but, since weve just moved, Im going to start getting into things a bit more and hopefully learn and improve a whole heap. And drink more coffee of course!!!

                          Ive just moved from to Brisbane from the Gold Coast and Id be really interested in doing a coffee course of some sort when I get the chance.

                              Hi and welcome to CoffeeSnobs....

                              Baristas come in two varieties.....

                              The large chain, corner deli type (not all fit in here..... but the vast majority)

                              They know how to flick the dose lever on the grinder to fill the PF....
                              They tamp the grinds in the PF.... sort of...
                              Lock it into the machine.... and press the go button..... the machine spews out a measured dose of "espresso" into the cup.....
                              Meanwhile the jug containing milk is resting under the steam wand with preheated milk being reheated.... AGAIN!!
                              The frothy Milk and espresso are thrown together and given to the customer!!!!
                              These Baristas may not even drink coffee- and if they did - wouldnt know a good coffee if they fell over it!!!!

                              Now a real Barista
                              They are the true magician of the coffee machine...
                              They know and love coffee, and know how to get the best out of their machine....
                              They adjust the grinder as the humidity changes and the beans age...
                              They have consistent and accurate tamping technique...
                              They manually extract the espresso, watching for the first sign of blonding....
                              They know when things arent perfect.... and any extractions not up to standard - down the sink
                              They texture the milk, fresh each time, holding the jug in their hand to feel for the correct temperature....
                              They serve up a great coffee.... with late art on top of flat whites etc....
                              They clean the steam wand immediately after texturing a jug of milk...
                              They have a true passion for coffee, and know what each variety should taste like....
                              You will know when you have had a coffee from such a Barista..... it will be just Sooooooo Good!!!
