    Hey people,

    My name is Paul Lee and I am a newbie. I have recently decided to make a profession out of this industry. I am trying to work my way into becoming a professional barista (which is quite hard, so any advice and guidance would be appreciated ;D) and reading as MUCH as I can all on coffee.
    So I am a newbie which will one day become an Elite.

      Hello All, Im Richard and I have just purchased my first Exspresso machine for home. What is an off the shelf coffee to start with. I  like my coffee (at this stage) some where in the middle, not too strong and not too weak. I have had Jamaican Blue in a Hong Kong and liked it... Can anyone assist to get me started.   Thanks.

        Welcome to CS Richard.

        First thing... its Espresso.

        We dont recommend anything off a shelf; find yourself a local roaster where you can be assured of freshly roasted coffee.
        Discuss with them your likes and dislikes and they should be able to recommend something.
        In the end its up to you to try them and decide what you prefer.

          Basically, coffee is a fresh food consumed as a drink as a result of brewing in any number of several brewing methods. The coffee on display in supermarkets, delis and other places is most likely not fresh as freshly roasted coffee is considered to be stale about 3-4 weeks post roast, and if pre-ground it will be stale in mere minutes.

          Best to grab yourself a decent grinder and some freshly roasted beans from a reputable specialist coffee roaster. You will be singularly impressed by the difference in quality that is possible via the simple virtue of insisting on high quality, freshly roasted, whole coffee beans and only ground immediately prior to brewing.

            Gday Folks,
            Ive been a CS member for a few weeks now but had no reason to post as I couldnt contribute anything.
            Dont worry Richard, Im in the know very little basket too Ive had a Sunbeam 6910 for over a year but have been using pre-ground Vittoria - before you laugh too much, it makes way nicer coffee than the plunger/Vittoria combination that was my previous setup. :
            What really set me going was that a coffeeshop in Wollongong was recomended for a visit and I couldnt believe how nice their coffee was Ive been on a mission to improve my coffee ever since and that lead me here.
            Ive just bought a ECA KS grinder (2nd hand from a CS member - who made me the nicest latte Ive ever had) and cannot believe how much better its made my coffee. Even my wife has commented on the improvement - maybe I will be allowed to buy that Mazzer Mini soon ;D

            Geez, thats an essay already, Ill leave it there. Nice to be here

              Welcome Brewman...dont worry too much about your preground set up, there have been plenty here that have made the journey from those humble beginnings!

                Hi guys and girls,

                My name is Craig and im new to CS, heres my story.
                I first fell in love with coffee when i was 19 yrs old (now 25) during a hospitality course i took at TAFE. This is where i learnt to use an espresso machine and i distinctly remember never wanting to pour my coffees down the sink, so i drank about 7-8 cups during the day and needless to say i had the shakes and didnt sleep very well that night...Lesson 1: dont overdose on coffee.

                I bought my first machine for $200 shortly after, it was a Breville Cafe Roma, used store bought pre ground for a good 2 years until i decided that i wanted more and decided to purchase a grinder ($80 Kenwood) and buy beans whole beans from the store. Not to long after i wasnt getting what i wanted and whilst roaming around Alexandria, SYD the most beautiful smell cought my nose...a Coffee Roaster...after buying a kilo i soon realised that this was the only way to do coffee.

                Two Christmasses ago my lovely Fiance bought me a New Sunbeam 6900, my Kenwood Grinder was no longer sufficient and so she was kind enough to compliment the new machine with a new EM480 from Sunbeam. Coffee has been great ever since. Although my Breville was relegated to the workplace it was still getting good usage but it was no 6900.

                My Fiance now works at Sunbeam and i have upgraded my office Breville yet again to a Sunbeam 6910 and also have a EM480 at work.

                After looking through some of the CS threads i have discovered home roasting...my first roast was on the frypan and was a disaster...what was i thinking...looking back to my childhood i remember mum bought a popcorn maker and she hardly ever used so one day when she was away paid a visit to the old family home and i raided her cupboards looking for the popper BINGO there it was Breville Quick popper...thatll do the trick. Ive since done about 10 roasts of various origins with mixed results.

                Im always looking for tips and tricks to improve my coffee and roasting and i am seriously thinking about a career change into the industry!

                I find CS has an almost limitless amount of information from many experienced individuals and many of the techniques i use have come from you guys.

                I look forward to posting more and getting to know some of you.

                Sorry for the wall of text but i dont have many people that understand why im so passionate about it, so its not often that i can express it like this!

                    To be honest, you guys know more about these machines than many of the people at Sunbeam, you know why you dont need the plastic thing below the filterbasket, you guys are the ones that pulled it apart and took out all the unnescessary items like froth indehancers.

                    If anything the folks at Sunbeam would benefit from listening to your feedback on their machines.

                    That said, my fiance says that theres a few employees that can pull a mean shot out of the ole 6910. and every office day is a Latte art competition!

                        I presently have a Sunbeam 3800 which I will be keeping for a while, the boss doesnt drink coffee, so she wont let me upgrade

                              Another Newbie here.

                              Love a great cup of coffee but am too impatient too put in the hard yards. So have an automatic machine which grinds the beans for me and spits out a half decent cuppa. [smiley=laugh.gif]

                              I doubt I will be posting much as I am pretty ignorant....just means I will be reading and learning a lot from the rest of you gurus.
