I think they maintain the chocolate in liquid form in a small baine maree-like thingo (however you spell it) behind the primary coffee making/serving area and ladel it out as needed.

PS: My secret fantasy is to jump behind the counter when no-one is looking and, using a 12 inch segment of garden hose as a makeshift straw... well,,, you get the rest

I havent seen such a thing near the coffee machine... next time will hang around and watch what they do!
YOure giving me flashbacks to when I worked at McDs as a teen and we would fight over who filled up the choc and caramel sundae sauce, b/c that person got to lick the spoon.
If there was more than one of you, couldnt you take turns at keeping watch while the other one did some, er.. "Syrup Slammers"?  ;D

Grendel - I had no idea about the Chocolate Ristrettos - WOW!  Ill be waiting on their doorstep at 6.00 am tomorrow morning

My fav hot chocolate is in a "suckao". Its a special cup with a tea light candle underneath and a metal straw/spoon thing. The way its set up (chocolate on the side) the customer can add as much or as little of the chocolate to the milk as they like. In my case all of it!!! Soooo yummy.

    surely not in the microwave??
just curious because I would love to eventually offer a wonderful hot chocolate/mocha creation, and wondering about liquid choc as its the only way to go for the theatrics. Have had some wonderful mochas at Salt in Rosalie (Bris), and Im not a mocha/hot choc drinker at all.

I had a fanastic hot chocolate from a cafe the other day where I believe they melt Belgian milk chocolate and fold that into the steamed milk (Im not sure if that is the exact process they use, but I do know that the girl I was there with (who also had a hot chocolate) just about had an orga,,, er,,, "When Harry Met Sally Moment"

    Cheers,
