Re: Steaming Eggs on an Espresso Machine

haha my standard eggs (while cooked on the stove) do not contain milk and deffs contain a tiny bit of soy sauce, fish sauce and sake or Mirin - which adds a deliciously sweet element to the dish

    oh and S+P of course!!

Re: Steaming Eggs on an Espresso Machine

All this talk had me make scrambled eggs this morning.
Gave my mum a taste (she was visiting for coffee) and she liked them.

Had a dash of milk but if Im prepared I prefer a dash of cream instead.

Ill have to try the fish sauce next time instead of the salt.

Forgot to mention, I have a dedicated frying pan thats only used for eggs.
It still looks like new as nothing scratchy goes near it.

I dont ever have trouble keeping my steam wand clean, always wipe outside with wet sponge, then purge inside with steam and then hot water
the steam and hot water is under high pressure, never have a problem.
When i did get my Silvia steam wand and fitting it and cleaning as above a whole load of crap came out, from previous owner. but i always purge after use and it always clean. I think purging with hot water keeps it clean and re-fills the boiler.

I've done this and it works very well if you get the recipe right. I just put a dash of milk in a 600ml milk jug with two eggs and fire it up. Haven't done it in a long time though, just really to try it out. I don't recommend it on a non-cool-touch wand, it sticks pretty badly.

Sorry, this has been done before at:

I have now scrambled some eggs with my Breville Dual Boiler.

It is easier to clean egg off a non stick frying pan than off the steam wand and it is hard to cook bacon on a coffee machine. I might try chopping it up and putting it in with the eggs.
