Tried this earlier on today, it was O.K. nothing special, bit of mucking around, doubt the effort was worth the outcome, I enjoy pan fried bacon just as much, it's also a lot less effort.

Definitely takes some effort, it's a great take on the traditional version. Kudos to Gordon St garage in Perth where I tried this dish recently. Have replicated, but not to their level of ability.
While it may be big on quantity my personal experience is that their quality quite bluntly sucks. So much so that though I love breakfast I avoid Denny's like the plague. Unfortunately most of the other low end breakfast restaurants such as Perkins, IHOP (International House of Pancakes), and the Waffle House while better are a long way from where they used to be. All three of them used to produce quite nice breakfasts. Through the years however rather than raising their prices they have reduced the quality of their ingredients. Cheap butter 'flavored' (No actual butter in them.) oils for frying eggs and hashbrowns, cheaper cuts of meat (Including the bacon.), and cheap, typically corn syrup based, syrups using such cheap artificial flavoring agents that you might have a hard time identifying what the purported flavor is supposed to be.
If people are anywhere near as much of a Foodie as they are Coffee Snobs try the above places if you must but then look around for a good local cafe that uses real ingredients and pay the extra few bucks and have yourself a real breakfast with real butter and real maple syrup.

What can I say, cant argue with local knowledge, been 6 years since I last visited, was good then, perhaps things have changed.

On our last trip had breakfast at a couple of restaurants in West Texas, they certainly were pretty good.
