TL;DR: I can't get a good shot, always come out under extracted, maybe this machine not designed to work well with non-pressurised baskets?
This is my first coffee machine for home that isn't an Aldi pod machine.
It comes with single and double pressurised baskets, but you can also buy non-pressurised (single wall) baskets from Sunbeam, which I did.
I'm having trouble getting a good shot with them, and I'm hoping for some help.

I've gone and bought fresh beans (roasted about 6 days ago), which are fresher than the Coles bought beans I was using.
I've tried varying the grind size, coffee amount, tamp pressure, etc.
Even on the 1 (finest) setting with the grinder and double tamping the coffee, it still comes out too quick and is under extracted/sour with almost no crema.
If I use the pressurised baskets that the machine came with, I can get reasonable shot with good crema.
My thoughts at this point are:
1. I need to put more coffee in or
2. I need to tamp it harder or
3. This machine is not designed to work well with non-pressurised baskets?
I've made so many coffees in the last week, that I need to stop my experiment and ask for help.
