An E-61 can continue to show pressure in the group after an extraction even if it is not plumbed. Nothing to be concerned over. If you lift the lever just past the point of first resistance you will see the gauge drop as the brew valve opens.

Just wondering should the brew head gauge go back to zero after extraction of the coffee or should it stay around three bar like mine does. That is when the machine is on and idle it stays on three bar.
You have it plumbed in, yes?
If so, the reading on the gauge is measuring the line pressure into the unit, ie. all good.
