I thought that the paddle allowed the user to partially "turn on" the flow (by partially moving the paddle across), in essence let water through under reduced pressure, and then later start the pump (by moving the paddle to full deflection). This would then push brew water through the puck at the 9 bar pressure from the pump.
What I see I the barista going to the full on position, straight away (or did I miss something?). What benefit does the paddle have when used this way? Have we all fallen for some voodoo? Cant I do the same as he is, by using my manual brew button?
That is an expensive paddle, and doesnt seem to bring an advantage as used this way. Or have I understood its use incorrectly?
