    Anyway if you see an Izzo or San Marco Lever and feel like a self indulgent splurge do it, you wont regret it.

    Go on keep rubbing it in!!!!!

    Boiler pressure initially as far as I am aware due to ther valving you are opening the boiler to the group as their is no pump to push the water to the group.

    As the lever get beyond about 1/2 way the lever that sits behind the group (see photo below) gets opened by the cam on the lever, its at this time the water comes into the top of the puck and iunder the piston.

    is pre infusion just via gravity / boiler pressure / or piston ???

    Two basic versions of levers Pavoni Europiccola and similar direct pressure exerted on the piston by the user controlling the pressure on the handle and the spring lever.

    Spring levers are the most common in commercial machines like all the San Marco group based machines Rancilio etc....

    You have control over shot volume by how far you pull the lever down so a short shot or modern Ristretto is just that a short pull.

    Pre Infusion you can hold it for as little or as long as you like to pre infuse the puck. I like 7-8 seconds or until the first drops appear from the spout of the portafilter, I really need to do some back to back testing with more or less and see what changes it really makes.

    When you release the lever on the up stroke you can actually speed or slow the shot by pushing or dragging on the lever which will either raise or lower the pressure on the puck such as the Slayer etc can now do with their paddle groups. Commercially I leave it alone as I am really to busy on milk normally but there is lots of playing here with time.

    In addition to this you can place the cup under or drop it out like with any machine at anytime with a pour. More testing needed but I like the middle pour idea for a ristretto so sink shot the first few ml of the pour grab most of the middle and sink shot the tail end for an Espresso.

    The basics of a lever is that you have as much or more control as most of the exotic end of the market but repeating it time and again is on the head of the Barista/snob

    I have a question having never used a lever ever.

    when your pulling the shot is there any way to stop it? or do you just remove the cup from under the GHandle and let it finish on it own?


    I do want one.....

    ;D Funny I did think of telling you when I was considering buying it but well

    Same as your thread you would be more than welcome to come down and play for a while if thats of use to you. Apart from Friday to Monday over Easter when its in use, the machine is heading into storage for a while till the next job and while I get a proper cart arranged. Either that or Chris K at Paridiso Roasters does have a 3 group set up at his roastery in Clayton and was importing them into Oz.

    Left arm tennis elbow I think from the levers, somewhere between 10 and 15kg so far for the weekend along with 70-80 litres of Milk I think

    Nice to catch up with javmad briefly as I was working, will have to have a more relaxed play with coffee toys and roasters in the next while when we both have time. Plenty of other want to be or snobs in the making, few new members coming I reckon The pace has been a bit manic at times but I have staffed fairly heavily so we can chat to who we are making for and about coffee a bit.

    Generally a great experience and the crowd is interested in the process (I think the nature of the machine helps generate the questions), lots of Melbourne based customers, plenty of repeats including quite a few who left the main venue to come back for another coffee rather than have one there (had trouble going throught doors after that ) Numerous discussions on Macciatos and how people like them or how they should be made :

    Double Dutch Choc, "best ever" and wow thats great where do I get some of that, wil he sell it to me too .... [smiley=thumbsup.gif] Andy

    Net result I guess I am in the coffee cart business for at least some of the year

    Beer time and sleep for now, last half day tomorrow and I will have some pics of the trolley setup etc tomorrow.

    Got to see this beauty in action yesterday. Not only did the punters get some very nice coffee but who ever asked were also educated in the finer arts of coffee snoberism.

    Great job Tim.
