    Thanks KK, Mischa, Randy, Lwowiak and Brett - appreciate the insights offered! Will weigh up the different options proposed. Based on whats said, we will probably leave the water for tea entirely separate to the machine and focus the equipment on just coffee and hot chocs.

    In response to Randy - ideally, we would like to afford equipment that we can grow into.

    One other question - should we go for a fully auto or semi-auto?

      semi-auto vs. full-auto is a personal thing I suppose. If there were two machines that were in all other ways equal, I would choose semi. If you price things like control panels and electronic boxes, repair is expensive enough. My opinion is: why add complications that could add dramatically to repair costs and lessen my ability to diagnose and repair my machine just for the convenience of not having to start and stop the brew cycle? On the other hand, if there was a machine I just had to have, I would not eliminate it from the list just because it was full-auto.

        Looking at your brief as well as KKs unanswered question later on, I am going to suggest this option from site sponsor ECA: http://espressocompany.com.au/steam.htm

        It will easily cater for all of your tea and hot chocolate requirements.

        I think that this plus a 1 group (or 2 group compact) heat exchanger machine will easily handle your requirements.

            Jumping in on the percentages question.

            Ill start with barista 100%, beans 100%, grinder 90%, machine 10%. That adds up doesnt it? :-?

            If you have a bad barista, no amount of quality of the rest will make consistent good coffee.

            If you have bad beans, no amount of quality of the rest will make consistent good coffee.

            Grinder...well its more important than you think (as stated above). More important than the machine, especially given any of the machines your are looking at are capable of making a good coffee.

            Machine...well anything you are looking at is capable of making good coffee - so its actually the least important of the lot by a long shot. For machine you need to focus on your original questioning - one that meets your needs e.g. very high steam capability.

            Chris answer seems perfect. A great item for high capacity steam, as much water as you need for teas and then you can look at a compact espresso machine without making the decision solely on the steam capability. And if coffee happened to become a larger and larger part of the business, hot chocolate makers can stay out of the way of the barista and the coffees can keep on coming.

                Thanks for sending the link Chris! That may just solve our "hot beverage issue"... and in which case (given Pavoniboys post) I suppose we could look into a cheaper coffee machine?

                But thinking it through, wed probably still have to go for a 2 group... regardless of the quality of the cup we produce, I dont think consumers these days would buy coffee from us if we had only a one group machine on display... (rightly or wrongly) I think its a market perception thing.

                KK - Based on my limited understanding, I thought that in a fully auto machine the brewing/filling automatically cuts out by itself; so when i referred to semi-automatic i assumed the machine would give us control to cut off the brewing. Is this correct?

                Re 2 group compacts, does anyone have a favourite or a recommendation based on reliability? I may be asking the obvious... whats the difference between a heat exchange compact 2 group and a heat exchange normal 2 group? Is the difference limited solely to the steam recovery ability or is there more to it?

                Appreciate your input!

                  What you want is a volumetric machine
                  It gives you all the above user functions
                  Programmable Auto, Programmable Semi Auto and On - Off manual

                  I asked the original question is because theres one level past the auto and that is a super auto where the machine also grinds and tamps the coffee similar to McDonalds
