Got the steaming milk right. Just patience and a slightly different hand-wand position. The R58 has huge amounts of steam. I used the 1.2 nozzle and the boiler pressuer remain just under 1 bar.
Looked up an old thread and reference to Talk Coffee on boiler care and will now take off a cup of hot water possibly daily to refresh the water in the boiler. I had read somewhere that using the hot water for tea was not a good idea but I think this referred to using the machine as a kettle!
Update: boiler water was black on an older Giotto PID that is 15 months old. It's now been fully refreshed and is nice and clear. Memo to self: refresh water often!
