100% agree on the economics and efficiency of roasting yourself, as mentioned it's not your core business. Why not speak with a few local roasters and investigate the option of private labelling for a point of difference?
Silverchef would be a great option to utilise new equipment and ensure you have warranty and no maintenance/repair costs should there any issues in the first 12 months. I have seen first hand too many times people selling "perfectly working used equipment" to which buyers have found out the hard way it is not perfectly working and operating a business relying on working equipment, that's not something I would want to find out the hard way..

Based on your estimations, a 2 group machine would be plenty. As stated, there’s good second hand stuff available, and with the pandemic there’s likely to be more.

For a 3 group it’ll be more like either 20 or 32 amp power depending on machines.
also look into using a company like silverchef. It’s a rent try buy type of business that is good for hospitality equipment.
no money out of pocket, machines are off your books so 100% tax deductible and if it doesn’t work you can hand the machines back.
Remember water filtration.
to be honest, I doubt you will be maximising profit by roasting yourself. The cost of the roaster, bean supply, bagging, your time etc. find a good Roastery who can support you. You’ll have enough headaches in a new business without the added concern of roasting quality. Just my opinion anyway
also the linea will out perform the kvdw in high volume

thanks for the response- yes I've been going through the various second hand offerings here in Vic- KVDW are very available in 3 group configuration. They are a HX machine, but appear to have a lot of horsepower..... It's very difficult to justify a new machine given that it will not be the core business, but we want to offer "crafted" coffee rather than the usual Lavazztoriajeans swill that is on offer locally.
Grinders are easy- I would go new and probably use my DIP DK65 and get a second one for decaf- they churn out 20g in 5.5 seconds so keeping up with a morning rush isn't too difficult. Servicing could be an issues, but holding a spare set of burrs is doable.... you make a good point on sticking with Mazzer or another more mainstream brand, especially at the second hand price point!
Good call on power- I'll have to investigate whats available in the existing premises- that may influence machine selection. Plumbing is no problems as I am a qualified plumber!

Seeing no one else has replied thought I would comment even though I am not an expert.
You could go second hand. There seem to be a lot of excellent commercial grinders going cheap here at the moment (eg Mazzer) and I notice second hand 2 and 3 GP Commercial machines can be bought relatively cheaply through Auction Houses etc. So if you are handy I would go for a simple one without too much fancy electronics which might be difficult to maintain. I have a 2 GP Brasilia Portofino at home which is a semi auto HX machine without any electronics and is very easy to service. You probably will need a 15 Amp power point and to be able to plumb it in.

Commercial machine advice
Hi Snobs-
My wife and I are closing in on a business for sale in a very high foot traffic area that specialises in homewares and gifts. It's opposite a parklands/playground, near schools and there's no coffee within 200 meters, so naturally providing coffee has come up to compliment the shop- think "espresso bar" style. Looks are absolutely everything and we don't want to be contracted to some shi**y commercial bean company for equipment and product. We'd really like to move into doing some roasting in order to maximise profit and provide additional revenue streams to the shop. I have worked in restuarants and cafes as a young man and I'm competant in handling workflow of busy periods.
I'm thinking a second hand 3 group machine with a few good grinders (would prefer on demand) and potentially a 1.5-2.5kg roaster.
Any advice i would be appreciated, I would expect to go through 10-25kgs a week in coffee based on being in a busy holiday town that absolutely heaves during peak seasons (school holidays, easter, festive season etc)
Love the LM Linea PB 3 group, due to being a dual boiler/PID system.... but love the KVW HX beasts also.....
