  • Can anyone make sense of these comments regarding my ECM Synchronika?

    had my ECM in for repair and the tech commented that my steam temp/pressure was way too high. I have it set at 2 bar, which is allowable with the updated V3. He changed it back down to 1.4 bar or so

    He said that 2 bar is too high because "it will burn the milk", which makes no sense to me. Surely it's the user that burns the milk, not the machine. My other machine is a Linea 3 group so I'm accustomed to a lot of steam. I prefer coffee that's good to drink immediately, so I make it cooler than standard cafe temp. He was also making a confusing claim that the high steam temp will affect the brew, somehow. I can't figure this, since it's a dual boiler machine with PIDs for both boilers..

    I didn't want to argue the point too much because he surely knows more about this than me, but are his claims accurate?

      I'd rate both bits of advice as inaccurate.

      Steam pressure does not burn milk.

      On dual boilers there is no correlation that steam pressure / temp alters the brew boiler temp.

      Hopefully he's a better mechanic than his advice suggests.

        Good to know. Even my wife gave him an eyeroll and dismissive "coffee snobs..." as we drove away (no offense to present company)

          Methinks a replacement service provider might be a worthwhile consideration if that's the level of product knowledge...just sayin

            I steam at 2 bar (133 deg) on a Synchronika with the stock 2 hole tip - not a chance of burning the milk unless you steam the milk past about 80°C - at that stage you'd be burning your hand testing the jug metal temp.

            Less than 2 bar on this tip is too lethargic. 2 bar is still a bit slow but fortunately I only steam 150 mL. The positive is that it's just about impossible not to get excellent steamed milk at this pace.

              Many techs know very little about good coffee. This is not uncommon.

                My steam boiler is currently at 140+C. Results (with the exception of my occasional lapse in concentration) are always nicely textured, sweet tasting milk at around 65C. Set the steam temp wherever works for you.
