Well I am in a quandary at a Syphon demo at St Ali yesterday run by Toshi and he was dosing really differently to me and to most others here from the recent posts on Syphon brewing.
Brief run down was coarse Plunger, 24g using 150-160ml of water in a TCA2 Hario and a 45 second brew time. Stirring method discussed elsewhere. Also using a really light roast at only a couple of days old. From the talk he was giving he was aiming to get 1 cup of coffee (130ml) and the extra water being absorbed by the bean mass.
Up to now I have been running 7-8g/120ml of fine plunger and have settled on about a 60 second steep time.
The high dose and the coarse grind makes the draw down time really quick which is a benefit if you are trying to manage bean contact time.
I have tried some shorter brew times around the 40 second mark using my normal dose and grind but found it weak. So up he dose shorten the time and coarsen the grind or leave it how I have it now is the question?
