Thats a nice Video, always something to learn, this time larger grind size and longer bloom time.
Loving the sock so will push the paper filter selection to the back of the drawer (for now anyway).

I have only used the Chemex a few times. In each instance there has been a pretty pronounced papery taste - even at the WBC brew bar this year! I dont know what types of Chemex paper were used.
If you check out James Hoffmanns Videocast #3, he states that (a) he hates the taste of paper and always rinses with at least 1L of water and (b) he thinks that Chemex bleached papers are "better than most": http://www.squaremileblog.com/2008/12/27/videocast-3-chemexpourover/
Couldnt you just put a nicer filter paper into the chemex? The Melitta shape might not work, but presumably the hario shape will fit? Either that, or, as you have discovered, a neru filter could be pretty good. I havent done any head-to-head brewing, but the neru cloth seems to have a faster flow rate, so on this basis a grind/dose adjustment might be necessary between the two.

Acog the sock IMO is the business. Still use hario ceramic cone with hario paper filters (some smell yes) and also use filtropa for bigger brews but at present I seem to be in a season of Neru thanks to reading posts here. My roasts are still s little too dark so I will try some pre SC.

I just checked my Chemex papers and theyre also Chemex Bonded FP-2 Filter papers.
I honestly dont notice any taste. Perhaps try getting a neru sock and trying that out?

I said that? :-? haha, well if I did, hmm.... depends, on what they are. I know a few times Ive had papers that I can smell when I wet them, but cannot taste any difference in the water, even unbleached ones. Youre papers are white, not brown, so Im guessing theyre bleached. I have some Filtropa unbleached that smell like wet newspaper when wet, but I cant taste squat in the cup. Admittedly, Ive stuck to the Hario and Kono V60 cone papers lately, and cant taste any paper taste. I have smelt the Chemex papers and drunk water (hot) that had been run through them and couldnt taste anything. Lately Ive been rinsing sometimes, other times not. And apparently theres a difference sometimes too (brand dependent).

I now (changes all the time) use 22gms for 300ml and taking Yeezas cue have gone for a much courser grind and really enjoying the flavours, especially with the sock over the chemex.

They are Chemex Bonded FP-2 filter papers. Came with the Chemex, they are white in colour. The word bleached is not on the box at all.
Would love to swap but on the wrong side of the Tasman for that.
Let me know if you have any scientific data to share other than caffeine overdose and dont let BF get you started on collecting mate ;D

Clearly Im not Luca, but having recently gotten a Chemex, Ive been doing a heap of brews through it, including some side-by-side brews with BeanFlying using his Hario Syphon and after rinsing, I dont notice the taste.
Chris, what type of chemex filter papers are they? Theres the bleached and non bleached ones. I dont remember which ones I have off the top of my head (I think theyre bleached), but if theyre different, Id be happy to swap some with you so we can compare.
Anyone up for some slightly scientific blind head-to-head tasting with various filter papers/cloths?

Is it just me or do the chemex paper filters have a really strong smell to them? I know Yeeza and Michelle have both given the whole filter thing a good lot of testing etc and Yeeza reckons most paper filters are ok if rinsed with hot water, but surely this effects the taste. Even if you cannot taste the filter itself it must change the taste of the coffee. I have 5 different brands of filters and some are fine but 2 definitely have a strong smell that does not go away with hot rinsing. I can taste the filter if I just put hot water through so surely its in the coffee :-/
