  • Syphon - does size matter?

    Any thoughts whether the size of a siphon is a factor in performance i.e. is a larger volume of water easier to control temp/brew compared to a small volume or vice versa?

    Personally I think size does matter- but is not the be all and end all. Any size syphon can get the job done.... but having said that I think the 3 cup is the perfect size (unless you really need more than 3 cups of course). I say that 3 cup is ideal because it has about the perfect draw back time. It also works fine for two cups. I have a 1 cup syphon (tiny!) and it is a little tricky to control the heat. I have a 10 cup syphon and you need to get the grind just right to get the correct drawback and brew times. I have 3 cups: they are easy- and you can use a wide variety of grinds.

    I also spoke to a syphon Barista in Taiwan and he said after 15 years of making syphon coffee he recommended the 3 cup models as the ideal size. He then made the best syphon coffee I have ever tried... (with a 3 cup machine).

      Ta - are your Bellina TCAs a 2 cup (240ml) or 3 cup (360ml)?

        They are 3 cup. I dont stock a two cup- I think three is better even for making two cups...

          and the next question of course is paper vs cloth filter. Convenience vs taste?

            I have never tested paper filters- but from what I understand most people prefer cloth. I have heard complaints about unpleasant papery tastes... cleaning cloth filters isnt too bad...
